This is really a simple, easy peasy recipe for a salad option! I mean, it’s so simple I debated a few hundred times whether or not to put it up on the blog!
But then this is what Kitchen Therapy is about – simple ingredients, easy cooking, hassle-free, healthy and appealing. I believe that a good meal need not have to be made from expensive ingredients, require fussy methods or exact measurements. It should be a natural course involving your senses, intuition and mood. There are no rules in cooking; the moment you enter the kitchen you must be at peace, humming softly, and working the magic as you please!
Sliced oranges, sliced cucumbers, red chilli, sea salt, orange juice, extra virgin olive oil, a pinch of sugar – and that’s it!
And it even looks so elegantly awesome – and tastes just as so.
I recommend this salad to be served on the side to a heavy main course filled with thick gravies, meats, or very spicy biryani. The cool cucumbers and oranges soothe the palate in contrast.
One red chilli is enough heat for this portion. You can deseed the chilli beforehand to reduce the level of heat.
The oranges and cucumbers can be chopped up to create a salsa or a relish to serve with meat, tikkis or chips.
