Orange Pound Cake

This is a delicious eggless orange cake adapted from Bakesalot Lady – a great instagram profile and blog to follow with the most beautiful images I’ve ever seen! I was researching eggless pound for a client and remembered this talented young lady that I’ve always admired. I went and found this recipe that she shared, which I adapted into an orange loaf. I also added a pinch of cardamom, because, really what is life without a bit of spice?

The Recipe
Serves 1 kg pound cake


  • 200 g flour
  • 20 g cornflour
  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 65 ml orange crush / pulp - Mapro or Mala's
  • 200 g castor sugar
  • 220 ml milk
  • 1 tbsp vanilla essence or 1 tsp vanilla extract
  • 1 tso orange zest
  • cardamom powder - just a pinch - optional
  • Glaze:
  • 1/2 cup icing sugar
  • 1-2 tbsp milk
  • orange zest (optional)


  • Prepare a 7 inch loaf tin with grease and flour
  • Preheat the oven to 175C
  • Sift the dry ingredients together and set bowl aside
  • In a large mixing bowl, cream the butter and sugar
  • Then add the orange crush and whisk
  • In the milk, add vanilla essence
  • Alternate adding the dry ingredient bowl and milk 6 times in total, careful not over mix - just combine
  • Bake for 45 minutes
  • remove from the oven and cool completely before adding the glaze on top
  • Glaze:
  • whisk the icing sugar and milk together until you achieve dripping consistency
  • pour over the cake and allow to set
  • Can add the zest on top before the icing sets
