
This is very similar to a pickling vinegar but multi-functional vinegar to add to dressings, curries, dals, dips - the works!

INSTRUCTIONS

In a saucepot, boil together the vinegar, water, sugar and salt until sugar has dissolved

Place the chilies and bay leaf in a 250 ml glass container

Pour the hot liquid over the chilies and let it come to room temperature

Then shut and place in fridge

Let it stay put for a few days before starting to use
