Chili Vinegar

Prep 200 -250 ml

This is very similar to a pickling vinegar but multi-functional vinegar to add to dressings, curries, dals, dips - the works!

Recipe adapted from Good Things by Samin Nosrat

INSTRUCTIONS

1 In a saucepot, boil together the vinegar, water, sugar and salt until sugar has dissolved
2 Place the chilies and bay leaf in a 250 ml glass container
3 Pour the hot liquid over the chilies and let it come to room temperature
4 Then shut and place in fridge
5 Let it stay put for a few days before starting to use

ingredients

1/3 cup apple cider vinegar
1/3 cup water
1 ½ tbsp sugar
1 tsp salt
2-4 whole green chilies – sliced
½ bay leaf
