This is inspired from an Instagram reel - where carrot salads kept popping up for women dealing with hormonal changes and that kinda fun things that def grab your attention. I felt that let me give it a shot, but because this ended up being so tasty, it has now become a permanent feature in my weekly menu schedule - paired with burgers or wraps.
I've also been having fun with the combinations - adding sesame seeds, pistachios, fresh dill, green garlic, shalllots - you get the gist!
The Recipe
Ingredients
1 cup, carrot – grated or sliver peels
1-2 tsp finely chopped basil or parsley
2 tsp finely chopped walnuts
1 tsp red wine vinegar
2 tsp extra virgin olive oil
½ tsp mustard
½ tsp honey
Salt and pepper

Instructions
Whisk together the olive oil, red wine vinegar, mustard, honey
Then add in the carrots, herbs and seeds and nuts
Toss and serve cold
