Cous cous is one of those very exotic sounding dishes, but really, it is as simple as possible. I get these quick cooking ones, where I simple add hot water, just enough to cover so it fluffs up on its own. I’ve never seen anything easier than this! I roast the pumpkin first which is literally random chopping and roasting all in one pan, into which later the cous cous goes in along with everything else! Make this as a whole big meal for yourself on it’s own in which case, add in some protein like chickpeas, boiled eggs or whatever! You can also add peppers, beetroots, spring onions, sweet potatoes – you get the gist!
