All-purpose ghee tadka {immunity boosting} with SpiceQure

This is an all-purpose tadka that you can add into just about anything to enhance taste, give that chatpatta taste, and all that jazz! SpiceQure Immunity Booster is a delicious spice blend that has been launched by two entrepreneurial young girls to help boost health and healing powers. They learnt from their grandmother and assists their help. This blend has powerful antioxidants and body healing ingredients such as turmeric, Moringa, cumin, fenugreek, cinnamon, carom seeds and my favouritee, saffron.

The instructions say to eat a spoonful with ghee/honey or milk/water every single day which in turn will help your vitality. I am incredibly impressed by these two young ladies, who’ve done a fabulous job in production, packaging, logistics and marketing – all during stringent lockdown rules and home schooling!

Now, eating this raw with ghee may not exactly be everyone’s cup of tea, and while that is surely the best and most beneficial way, you know me, I gotta mess with the instructions! So here, I get a bit creative and share an all-purpose tadka in ghee that can be added into your dal, sambhar, sabji, eggs, curries, upma, yoghurt to make an instant raita, on top of toast with cream cheese (like I do!), and into coconut chutney, tomato chutney…. Really, wherever you feel the need for an extra oomph of flavour. Here’s an option for Masala Dahi Bhaat

The taste of this powder does not need an acquired taste like most, but more like a delicious cross between garam masala and hot madras curry powder.

The Recipe

Ingredients

  • 1 tbsp ghee
  • ½ tsp mustard seeds (rai)
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • ½ tsp SpiceQure Immunity Booster
  • pinch of hing
  • 2 curry leaves (kadi patta)
  • ¼ piece of dried red chili (lal boriya marcha)
  • pinch of salt

Instructions

  • Heat the ghee on low in a tadka pan
  • Add the paste, kadi patta and red chili
  • After a few seconds, add the powder, hing and pinch of salt
  • Let cook for a few more seconds
  • Remove from heat and add into desired dish

Tomato Fried Rice

This is inspired from a NYTimes cooking recipe – an app that I have been scouring for inspiration instead of wasting time on Instagram. I saw a tomato rice recipe that inspired me to take a twist on it. Tomato and soy sauce is a wonderful combination and not used enough in my opinion. The tomatoes are blistered gently in a pan with flavours of ginger and garlic, and the a touch of soy sauce, with scrambled eggs, rice, veggies (mushroom works best here in my opinion), spring onions and toasted black sesame seeds – a beautiful umami dish.

Persian food is a staple in our home – I consider it my comfort food, similar to that of khichdi or biryani. What I adore about Iranian cuisine is the complexity of flavours, without use of chilies – making this the perfect meal for sick days, or days you need more TLC. Each dish is cooked in ghee, there’s an abundance of garlic, onions and mint, there is soothing saffron, and hung curd to bring it all together. Today, I made up my own recipe to use pumpkin as the vegetable – pumpkin works good for my body with it’s high anti-inflammatory properties, fibre and vitamins. Pair this with a lentil rice or saffron rice or flatbread.
