Brown Rice Pea Risotto

I have a major weakness for rice. When on a diet, I can easily let go of wheat products, but never rice. I can eat rice with my hands with as much glee as a South Indian eating his rice and sambhar.
So risotto with oodles amount of stock and cheeses are always on the table. But with the New Year resolutions kicking in to being healthy and eating right, I made my own version of brown rice pea risotto.
For me, making a healthier version often involves adding a lot more garlic, onions and herbs with less oil, and cooking them extremely well. Normal risotto calls for copious amounts of stock – here you do not need any.
Instead of cream I use regular milk (low fat), and a sprinkling of good Parmigianino or Padano cheese. I never ever use the boxed kinds (read: Kraft parmesan) – they have way too much salt.
I added in a few chopped walnuts too for some crunch and for nutrition counts.
For the brown rice, I recommend soaking in warm water for much longer than you would regular rice. This ensures even cooking. Cook the rice as per it’s instructions.
But I warn you, don’t expect this to come even remotely close to a real calorie-laden creamy risotto with Arborio rice.
With this one, you can actually feel the goodness nourishing your body and soul – and despite there not being any cream or much cheese, it does taste good and is a lot more filling than it sounds.

The Recipe
Serves Serves: 2 | Prep Time: 30 mins | Cook Time: 60 mins

Ingredients

  • 1 cup brown rice, cooked
  • 1 medium onion, chopped
  • 8-9 garlic cloves, minced
  • ¾ cup peas, boiled
  • ½ cup leeks, chopped
  • ½ cup milk
  • 2 tbsp olive oil
  • 1 tbsp thyme
  • Salt + pepper to taste
  • To serve:
  • Grated Parmesan cheese
  • ¼ cup chopped walnuts

Instructions

  • Sauté the onions, leeks and garlic in the olive oil until fragrant and well cooked.
  • Then add in the peas, thyme, salt and pepper.
  • Stir in the rice, ensure each grain is well coated with the oils and seasonings.
  • Pour in the milk and stir frequently until the rice has soaked up the milk and resembles a risotto.
  • To serve:
  • Add some Parmesan cheese and walnuts on top. Serve hot.

This recipe comes from one of those moments where you’re staring at the fridge, and fretting about the sheer number of ingredients that need to be used up before it’s time comes to end. This is perhaps the most daunting task I face with since I shifted homes and my mind is constantly at how on earth am I going to finish 250 grams of pumpkin. So I thought, pasta is comfort for me but how can I bulk it up? I’m perhaps one of the biggest fans of pumpkin – because not only does it taste delicious, but also is so versatile in taking on flavours – from a mashed Indian-style bharta, to a Gujarati style sabji with methi leaves, and also delightful in sweet forms in cakes and grilled with a pinch of cinnamon, honey and butter. And of course, in gourmet-style Italian form with lots of garlic, tomatoes, and my favourite, rosemary. This pasta has a lot of pumpkin cubes, cherry tomatoes, and onions cooked slowly, then added in some old red wine, with butter and rosemary and lots of red chili flakes. I had just a small part of comte cheese, so that of course went in at the end, and made a light sauce with spaghetti and I must tell you, I had a fine meal!

Perhaps that is mostly because I crave the more gluttonous dishes, filled with something more substantial than say, a salad. But this recipe may change your opinion, if you are like me – a regular salad, but dressed up with a unique concoction of ginger, toasted sesame seeds and other Asian flavours, this brings the groove back to a bowl of greens. It is incredibly easy to make and you can make this ahead of time and store in an airtight jar in the fridge for a few days. The longer it stays, the stronger the flavours will get, particularly the ginger and garlic, so you could probably decrease the amount. This dressing can also be used as a marinade for veggies or a dipping sauce for fritters – it is that versatile.
