Thick creamy soup – sans cream, and just a handful of ingredients is the perfect way to enjoy the monsoon rains, sitting by the window, warm and cozy.
I love this recipe, purely because of the ease and the fact that I have most of the ingredients in the pantry and the versatility the recipe offers. You can use frozen or fresh corn, add some more veggies, use pizza packet seasonings and chilli flakes… it’s entirely upto you and the contents of your fridge and pantry! Measurements are also flexible which offers peaceful and relaxing cooking moments!
And of course, if the love handles aren’t an issue for you, by all means, replace milk with cream!

The Recipe

Ingredients

  • 1 cup fresh corn
  • 1 potato, peeled and finely chopped
  • 200 ml milk or cream
  • 1 tsp olive oil
  • 1 tbsp butter
  • 2 tsp minced garlic
  • 1 onion, chopped
  • ¼ cup celery chopped
  • 2 tbsp mixed dried herbs
  • 1 tsp salt
  • 1 tsp pepper
  • finely diced spring onion
  • broken nacho chips

Instructions

  • Sauté the onion, garlic and celery in butter and olive oil in a large deep pot
  • Then add the potato and milk and let potato boil, stirring occasionally
  • Then add the corn, spring onion and dried seasonings
  • Serve with nacho chips on top
