Hot Rice with Chilli Eggs

I saw this on Instagram and never realized that a dish I basically lived on is a TikTok / reel trend! So here I am, sharing something too basic, but it seems it did need sharing!

It’s a couple of eggs fried in an intense chili oil with some soya sauce and sesame seeds – fried to a glorious hue – with rice that is piping hot with a dash of butter and soya sauce giving you a pack full of flavour – an intense love affair!

  • Recipe Ingredients 

1 tbsp vegetable oil
1 tbsp chili sauce
1 tbsp soya sauce - dark
2 eggs
1 cup cooked rice – hot
1 tsp butter
1 tsp light soya sauce
toasted sesame seeds

  • Recipe Instructions

Heat a small pan with the oil, chili sauce and cook until it sizzles
Then add the soya sauce and some sesame seeds and crack two eggs
Let them cook and crisp the edges up
Meanwhile, place the hot rice on the coupe plate
Put a small nob of butter on top and a little soya sauce
Place the fried eggs on top and sprinkle with toasted sesame seeds
Eat!

This is inspired from a NYTimes cooking recipe – an app that I have been scouring for inspiration instead of wasting time on Instagram. I saw a tomato rice recipe that inspired me to take a twist on it. Tomato and soy sauce is a wonderful combination and not used enough in my opinion. The tomatoes are blistered gently in a pan with flavours of ginger and garlic, and the a touch of soy sauce, with scrambled eggs, rice, veggies (mushroom works best here in my opinion), spring onions and toasted black sesame seeds – a beautiful umami dish.

Yes, I am catching onto the viral trends, albeit a lot later than many, but at least I finally am there! The baked feta idea came to me when I was consulting Toska Chocolate House when we started having feta in our ingredient list for a salad - one you must try if you’re in Ahmedabad. We serve it baked with homemade spicy tomato chutney, olives, herbs and lots of love! Feta is not my top choice cheese – not because of its taste, but rather the lack of shelf life. I’m a sporadic and moody eater, and we all know once you open that pack of feta, you pretty much need to inhale it within a day before it gets too sour. Which is why I have always refrained from buying it. This recipe I share here, is again stemmed from one of those nights where I found half a block of feta, just beginning to sour, so not suited for a cold salad. I thought, let’s bake it and see what happens. The flavours here are sweet, salty, spicy and crunchy – highlight is the fried almonds which is a sheer delight on its own, but even better here. This is one of those recipes that is put together by instinct rather than meticulous measurement – so keep that in mind when assembling and feel confident to adjust ingredient amounts as per your heart’s desire!

Perhaps that is mostly because I crave the more gluttonous dishes, filled with something more substantial than say, a salad. But this recipe may change your opinion, if you are like me – a regular salad, but dressed up with a unique concoction of ginger, toasted sesame seeds and other Asian flavours, this brings the groove back to a bowl of greens. It is incredibly easy to make and you can make this ahead of time and store in an airtight jar in the fridge for a few days. The longer it stays, the stronger the flavours will get, particularly the ginger and garlic, so you could probably decrease the amount. This dressing can also be used as a marinade for veggies or a dipping sauce for fritters – it is that versatile. The best way to renew a salad is by experimenting with the dressing flavours… and the more innovative we can get, the better for our taste buds and more importantly, commitment to a healthy diet!   The RecipeServes Yields: One small bowl  |  Prep Time: 20 mins   Ingredients 2 tbsp ginger slices 3 cloves garlic, minced 1 ½ tbsp rice wine vinegar 2 tbsp soya sauce 1 tbsp honey 4 tbsp vegetable, olive or sesame oil 4 tbsp spring onions, chopped 3 tbsp Toasted sesame seeds Instructions Smash up the ginger slices a bit, to allow the juices to flow. Mix in the oil, vinegars, honey, onions, garlic and ginger. Stir in the toasted sesame seeds just before serving.
