Roasted Potatoes with Lemon Dill Sauce

This is a great side dish to serve, particularly to potato lovers. These potatoes are easy to make, taste delicious and the unique part is the lemon dill sauce.

Dill is an underrated herb in my opinion – its lusciousness brightens up any dish. It goes incredibly well with citrus, just as well as it does with fragrantly cooked garlic.

I added in two hot red deseeded jalapenos, to add some colour and lend an exotic look, although honestly, it does not do much to the flavour minus the seeds. My house eats less spice hence the deseeding, but feel free to keep the seeds.

The garlic gets baked on the tray with the skins on here. When baked in its skin the garlic softens, removing the pungency and offering a brilliant sweet and wholesome taste.

The sauce is easy, fast and healthy too – and provides for an interesting twist to potatoes. Psst… it also looks pretty darn fancy!

Parboil the potatoes beforehand to cut the cooking time.

The Recipe
Serves Yields: 8 | Prep Time: 10 hours | Cook Time: 90 mins

Ingredients

  • Patties
  • 1 beet, boiled and mashed
  • 1 cup kidney beans, boiled and mashed
  • 2 potatoes, boiled and mashed
  • 2 onions, chopped
  • 8-10 cloves garlic, minced
  • 3 tbsp oregano
  • 3 tbsp basil
  • 1 tsp cayenne pepper
  • 1 tsp chilli flakes (optional)
  • Salt + Pepper
  • ½ cup breadcrumbs
  • Accompaniments:
  • 8 burger buns
  • 2 tomatoes, sliced
  • 1 onion, sliced
  • 8 cheese slices
  • 16 leaves of lettuce
  • Garlic Sauce
  • 1 cup thick yogurt
  • 5-6 cloves garlic, unpeeled and halved
  • 1 tsp olive oil
  • 1 tsp dried thyme
  • Salt + Pepper
  • Optional Relishes:
  • Tomato ketchup
  • Dijon mustard
  • English mustard
  • Green chutney

Instructions

  • Patties:
  • Sauté the garlic, onions and herbs until well cooked and fragrant.
  • Add in the mashed potatoes, beets and beans.
  • Add in the salt and cayenne pepper and mix well.
  • Remove from heat and let cool.
  • Form round patties the size of your burger bun.
  • Coat the patties in breadcrumbs.
  • Brush a non-stick pan with some oil and grill the patties on both sides until well done.
  • Accompaniments:
  • Heat a non-stick pan with on high. (NO OIL)
  • Place the onions, sprinkle some salt and grill both sides until well done.
  • Do the same for the tomatoes.
  • Garlic Sauce:
  • Roast the unpeeled garlic with some olive oil and salt in the oven at 180°C for 20 minutes, or until softened.
  • Remove from the oven and let cool. Gently squeeze the garlic into the yogurt.
  • Add the thyme, salt and pepper into the yogurt and gently mix.
  • Assembling:
  • Cut the burger buns into half, and remove some of the bread stuffing inside.
  • Spread the garlic sauce on both sides.
  • Place the lettuce, tomatoes, onions, cheese and any other accompaniments/relishes you want.
  • Place the warm patty and cover with the other side of the bun.
  • Grill the bun on both sides on a non-stick pan with no oil.

This is one of my favourite sauces that is so versatile - it goes in pasta, on top of grilled vegetables (w zucchini being my fav combo), with baked potato, rice, orzo, marination for fish - the list is endless. I make this butter sauce in the morning for the evening, and whilst some say you can use it upto 2-3 days, I've never had it last beyond that one meal, no matter how much I make of it!  This recipe to make is more of a sensory one, adjusting as per your mood for the day, and also if its to be cooking instantly, drizzled lightly on top, or marinated for a while - the adjustable ingredient being the wine and lemon juice. Make this a few times, and you'll get the hang of it. Each time I dress up the sauce based on what I have. This time I used a lot of capers, tomatoes and pistachios, and few pink peppercorns. But I have in the past added basil, parsley, coriander, sun-dried tomatoes, pine nuts etc!

Perhaps that is mostly because I crave the more gluttonous dishes, filled with something more substantial than say, a salad. But this recipe may change your opinion, if you are like me – a regular salad, but dressed up with a unique concoction of ginger, toasted sesame seeds and other Asian flavours, this brings the groove back to a bowl of greens. It is incredibly easy to make and you can make this ahead of time and store in an airtight jar in the fridge for a few days. The longer it stays, the stronger the flavours will get, particularly the ginger and garlic, so you could probably decrease the amount. This dressing can also be used as a marinade for veggies or a dipping sauce for fritters – it is that versatile. I don’t know about you, but I’m loving the new year already! Today’s recipe is a great way to use fresh figs and update it with a fancy flair, churning out a restaurant-like appetizer. It is embarrassingly easy to make, but incredibly sophisticated, impressing any food-snob. Figs, blue cheese and balsamic go together like bees and honey. The combination of texture and senses create fireworks in your mouth. The recipe is as simple as combining the marinade together, soaking the figs in, and then grilling them, and assembling on a plate with some lettuce, blue cheese and roasted pecans. Then reduce the remaining of the marinade into a thicker glaze and pour over the salad for dressing. I mean, if you’re going to be the host, might as well be hostess with the mostest! [yumprint-recipe id=’114′] The RecipeServes Serves: 2 | Prep Time: 35 mins | Cook Time: 10 mins Ingredients ¼ cup balsamic vinegar 1 tsp olive oil 2 tbsp brown sugar 1 tbsp honey 1 tsp salt 5 figs, quartered Lettuce Pecans Blue cheese, crumbled Instructions Stir the balsamic vinegar with the olive oil, sugar, honey and salt in a small casserole/dish. Place the figs in the marinade for at least 20-30 minutes. After the figs have been well soaked, heat a non-stick pan on high. Place the figs in the hot pan and let them grill on all sides (around 10 minutes). Hold back some of the marinade. Once the figs are done, remove from the pan and add the rest of the marinade into the pan, lower the heat, and stir continuously until the sauce thickens. To assemble, place the lettuce first, then the grilled figs, and sprinkle the blue cheese and pecans on top. Drizzle the thickened balsamic marinade over the lettuce leaves.
