Zucchini Miso Gazpacho

Did you know you can make a delicious soup with all the good stuff in matter of 5 minutes, by simply putting every ingredient together into a blender, followed by chilling in the fridge, just in time to serve? I know, I’m bordering on ‘how ludicrous!’ but I assure you I am not lying! Give this one a shot and thank me later!

INSTRUCTIONS

1 Place all the ingredients together and blitz until smooth, adjust salt levels and vegetable stock for thinness of the soup
2 Serve chilled with garnish of toasted chickpeas

ingredients

80 g zucchini, chopped
½ lemon, juice
1 tsp miso paste (shiro miso or white miso)
8 g cashews, soaked in water for an hour and drained
6-8 leaves of basil
1 clove garlic
1 tsp salt
1 tsp black pepper
¼ - ½ cup vegetable stock

Garnish:
roasted chickpeas
fresh basil

This is a real surprise package flavour bomb. Previously I've been hesitant to integrate too much fruit into savoury dishes, but this combination of sweet grilled pineapples cubes with lot's of spicy chilies, soya, ginger, garlic and basil is a sheer delight. This is a very simple tomato tart that showcases tomatoes at it’s very best. It’s especially great to make it when they are in season – but alas my schedule and seasons some time do not align! This is a tart I make regularly for my baby niece who usually has an affinity for sweets, but loves tomatoes and pizza.
