Matcha and I do not particularly have a great love affair – it’s perhaps better defined as a crush on a movie star – great to be love-struck from far, but upon closer look and conversation, things simply fall apart. I always try out things with matcha in it – lattes, cheesecakes, teas and so on, and I end up with walking away from it within the first bite / sip.

But, I truly am a glutton when it comes to bread, and when Riddhi Patel of Le Artisan Boulangerie showed me this loaf it was very hard to resist. A few bites into a slice, I ended up devouring half the loaf. This was that good. And can we talk about this colour? This colour is simply gorgeous and a sandwich in this bread is even better.

Because of this delightful colour I decided it deserved decadent toppings without much fuss – enter chocolate, almond butter, pomegranates and sea salt!

This tartine requires just a few smatterings about et voila, you’ve just produced something tasty and beautiful!

The Recipe
Serves 1

Ingredients

  • 2 slices Matcha Sourdough
  • 2 tbsp Almond butter
  • 2 tbsp Chocolate spread
  • Pomegranate arils
  • Toasted almond flakes
  • Sea salt

Instructions

  • Toast the two slices lightly on a non-stick pan.
  • Spread the almond butter and chocolate spread on each slice and swirl with a toothpick.
  • Sprinkle pomegranate flakes on top.
  • Finally add the toasted almond flakes and sea salt.

LAB X KITCHEN THERAPY X THE KITCHEN TRAIL   Finger sandwiches are an essential part of the Afternoon Tea or High Tea. It lends the wholesomeness to the in-between meal. For this menu, we aimed to cross promote the existing items that LAB makes in-house with the sole goal to make you try the various breads and understand how they can be paired with stellar ingredients. This menu consisted of two: Apple + Brie and the Edamame Hummus + Purple Cabbage   Apple + Brie: This sandwich was a super hit on the menu and converted even the staunchest traditionalist towards fusion. The soft Pumpkin Bread, which is an in-house specialty at LAB, pairs perfectly against spicy onion and thyme, along with sweet apple and savoury brie cheese. Note: in place of brie, can use any other strong flavoured cheese, like red Leicester, smoked cheese, or gouda   Edamame Hummus + Purple Cabbage: This is a beautiful play on colour and texture, where we have Ragi Bread which is indulgently healthy and coarse, paired with creamy Edamame Hummus and the best part – caramelised crispy purple cabbage. Purple cabbage is shredded into fine strip and grilled on high heat with a pat of salted butter and nothing else – it is simply delicious. Note: Edamame Hummus and Ragi Bread are both individually on sale at LAB Photography + Styling: The Kitchen Trail The Recipe Serves 2 Ingredients 2 pumpkin bread slice 1/2 tbsp honey mustard 4 thin slices of apple 2 brie slices 1 round slice of onion 1 fresh thyme sprig 1 leaf of lettuce 2 ragi bread slices 2 tbsp edamame hummus 10g purple cabbage, shredded 2 tsp butter pinch of salt Instructions Spread the honey mustard evenly and equally on both slices. On one slice, place the brie first, followed by thyme leaves, press down the onion slices. Press the apple slices on top. On the other slice, press down the lettuce. Fasten the sandwich. Cut lengthwise into half – creating two rectangular pieces. ook the purple cabbage in butter and some salt until caramelised on its own Spread 2 tbsp of edamame hummus on both slices Add the purple cabbage Fasten the sandwich Slice lengthwise to create two rectangles

I have long been a huge fan of rye bread, particularly after seeing Nigella chow down on her version of a “Hungarian sandwich” which is basically a dark rye bread smothered with dark cherry jam and a luscious amount of cream cheese. Because she does it and looks that amazing, I sometimes feel I can get away with the same too, but honestly, I look nowhere near as good as her! Closer to home, a local bakery used to make a beautiful rye bread for some time, but then ultimately stopped as I believe I was their only buyer. And the longing for good rye bread in India had me fidgety. Sattvic Foods has organic, fine light rye flour which works beautifully in this recipe. As mentioned before, I have been miserably failing at all bread attempts, but for the first time I achieved success in the first go of this recipe. I have made this bread multiple times since, and each time it is a sheer delight. If you’ve never made bread before, I highly recommend to start with this one! Recipe adapted from BBC Good Food. The RecipeServes 6 Ingredients 200g Rye flour 200g White flour 7g Active-dry yeast 1 tsp Salt 1 tbsp Honey 1 tsp Caraway seeds (ajwain) Butter Fresh rosemary Instructions Tip the flours, yeast and salt into a bowl. In a jug, mix the honey with 270ml warm water first, pour the liquid into the bowl and mix to form a dough. Rye flour can absorb lots of water, if the dough looks too dry add the remaining 20ml warm water until you have a soft dough. Tip out onto your work surface and knead for 10 mins until smooth. Rye contains less gluten than white flour so the dough will not feel as springy as a conventional white loaf. The dough will be sticky! Place the dough in a well oiled bowl, cover with cling film and leave to rise in a warm place for 2 hours, or until roughly doubled in size. Dust a 2lb/900g loaf tin with flour. Tip the dough back onto your work surface and knead briefly to knock out any air bubbles. Work the caraway seeds into the dough. Shape into a smooth oval loaf and pop into your tin. Cover the tin with oiled cling film and leave to rise somewhere warm for a further 1 – 1.5 hr, or until doubled in size. Heat oven to 220C. Remove the cling film and dust the surface of the loaf with rye flour. Slash a few incisions on an angle then bake for 35-40 minutes until dark brown and hollow sounding when tapped. Transfer to a wire cooling rack and leave to cool for at least 20 mins before serving. Serve warm with butter and fresh rosemary.

Pairs perfectly with this asparagus dish and blackberry dijon sauce The Recipe Serves Ingredients 1 cup flour ¼ cup semolina flour (50g) 3 tsp olive oil ½ tsp salt ¼ – ½ cup water to sprinkle: olive oil, sea salt, parmesan cheese, rosemary, dried garlic powder, herbs, pepper Instructions In a medium bowl whisk together flours and salt, then add oil and water to form a loose dough Then move to a lightly floured flat surface and knead for about 10 minutes, until smooth, form into a ball, and put back into the bowl and cover and let rest for 30 minutes Preheat oven to 200C and prepare a pan with light greasing of vegetable oil Divide the dough into 5-6 balls and roll thin flat shapes (cover the other balls while working Place on the pan and brush generously with olive oil and sprinkle the toppings of your choice Bake for 12-14 minutes – the edges must brown and be crispy Let cool slightly before eating
