Matcha Date Energy Balls

almonds · breakfast · chocolate · cocoa · coconut

Most people have no idea how good their body is designed to feel. Kevin Trudeau

Sweet cravings are a natural occurrence and looking for a healthier option can be difficult. Of course, a scrumptious chocolate chip cookie would work amazingly, but sometimes, we just have to get serious and say no to ourselves.

Dates are full of energy, natural sugar and fibre. They are a great source of vitamins and minerals such as calcium, iron, phosphorous, sodium, potassium and magnesium. Most importantly for me, these are perfect as a pre-work out snack. And I make various variations in them with each batch and keep them on my bedside to eat one piece with my coffee every morning before the gym.

These energy bites are extremely delicious and one serving will satisfy your craving just enough. The main ingredients are dates and SPRIG Golden Matcha powder, creating the perfect balance between nourishment and antioxidants. I add some cocoa powder for a delicious chocolate twist. I also add a little honey not to add more sweetness, but to help bind the mixture – the dates and coconut are sweet enough. Roll them in their garnish – coconut or matcha – and these will resemble fancy truffles and it’s a great way to get the kids to eat it!

A little note: matcha powder has a slight bitter after taste and must be used in small quantities. In the photographs below, I dusted a little more matcha for presentation purposes, and my darling Amar and Anjali (my photographer and stylist!) couldn’t eat them after. Keep the matcha to a minimum – you don’t need much of it to reap the benefits, which is also one of its extraordinary traits! A little goes a long way.

The Recipe
Serves 10

Ingredients

  • 10 small dates
  • 10 almonds
  • ¼ cup desiccated coconut
  • ½ tsp SPRIG Golden Matcha powder
  • 1 tsp honey
  • 1 tbsp cocoa powder
  • For garnish:
  • SPRIG Golden Matcha powder
  • Desiccated coconut

Instructions

  • Add all the ingredients together in a mixer and crush them down.
  • The mixture will be soft and slightly wet, like a dough.
  • Roll a tablespoon or so of the mixture between your palms to make a ball.
  • Do this with the entire mixture, which should yield 10 mini balls.
  • Roll these in some matcha powder or coconut.
  • You can store these in airtight container at room temperature for at least a week.

Quick Cheese Straws {no yeast, no egg}

This is the best recipe I've ever discovered. As kids, my brother and I gorged on flaky-but-sturdy cheese straws on the streets of London. Perfectly seasoned, crispy cheese on top and toasted sesame seeds, peppery rosemary - oh my - so so divine! I adapted a recipe I found whilst scrolling Instagram and found this too good to be true. So a Saturday morning when I had three little children under my wings, I set about this recipe - and my God, it worked! It's a dleight to eat, and great to make with the kids!

Roasted Chickpeas

Roasted chickpeas caught my eye on Instagram and the rave around it got me intrigued. Now I know we have the fried chickpeas in chakna snacks, and all that jazz, but roasted? It sounded like a hell of a lot of work. But when faced with a dabbo of boiled chickpeas, and in no mood to make hummus, I thought, let me give this recipe a go. Fairly straightforward, the steps are easy. The seasonings I chose made them even more delicious, and yes, they were crunchy and delicious. But I thought a little more crunch would have been great, so I added a little hint of rice flour to the next batch. Once they are out of the oven, stir with the rest of the seasonings, and in my opinion, eat straight away, warm and full of flavour and love. Don’t bother placing in a jar and storing – it doesn’t last long enough.
