Oat + Cinnamon Cookie {eggless}

We recently joined hands with a prestigious educational institution to design the menu and recipes for tiny tots. Now, cookies are always well loved and a great way to introduce yourself and gain a bit of love - yes, we bribe with cookies! So this recipe is just that - whole wheat and oats, brown sugar and raw sugars, warm cinnamon notes - making both kids and parents happy!

INSTRUCTIONS

1 In a bowl, whisk together the oil and water until it is emulsified and turned white in colour
2 Then whisk in the sugars and vanilla extract
3 Then fold in the dry ingredients and mix to make a dough – but gently
4 Wrap the dough in cling film tightly and let the dough rest in the fridge for at least 3-4 hours
5 When ready to bake, prep the tray with parchment paper
6 Preheat the oven at 160C
7 Make 30g balls and place on the tray, leaving 1.5-inch distance between each cookie
8 Gently flatten the ball on top
9 You can also stick some extra sugar on top
10 Bake for 15 minutes
11 Bring out of the oven and allow to cool completely before removing

ingredients

80 g water
200 g vegetable oil
120 g brown sugar (demerara, Blue Bird)
120 g coconut sugar / jaggery powder / khadi sakar / castor sugar
2 tsp vanilla extract
240 g rolled oats – Quaker Oats
170 g whole wheat flour
1 tbsp cinnamon powder – Ceylon
1 ½ tsp g baking powder
¾ tsp baking soda
¾ tsp salt

The other day I was gifted a huge fruit basket with lot's of blueberries and with an upcoming birthday party I felt it was time for a blueberry cake! I made a large one, adapting this recipe from Smitten Kitchen and Love and Lemons. This cake is not so sweet, so if you like, up the sugar to 1 cup and a few more spoons in the streusel. Enjoy!

This is a last-minute creation when my niece came over and promptly wanted to make carrot cake. Now this child comes with a list of instructions, so we had to opt for whole wheat flour, but we drew the line at sugar, because brown and white sugars are very much our jam! We added some pumpkin spice seasoning, cinnamon and nutmeg for warmth, and the topping is chopped up pecans, some sugar and pinch of cinnamon for a nice little crunch on top! These muffins rise very well and perfect for after school snack or breakfast on the go!
