I use the Calming Brew that is cold brewed for this delightful cocktail – delicate notes of lavender, chamomile and lemon peel, with a hint of sweetness of honey, against the smoothness of bourbon – a great cocktail to shake up when you have people over, or just for yourself, to relax at the end of the day!

  • in a shaker stir up the calming brew tea and honey
  • in whisky glass, pour the shots of scotch over ice
  • strain the calming brew mix into the glass to the top

You know what this feels like? Christmas in a bottle! This warm spiced syrup is speckled with peppery rosemary, bright oranges, and hints of spicy ginger and warm cinnamon and cloves – exactly what you want on a quiet winter night. I made this syrup using khadi sakar (raw sugar powder) since I had it lying around, and also makes me feel a tad-bit less guilty of the sweetener choice, and indulge in a side of the Christmas cake! Recipe Serves 250 ml approx Recipe Ingredients 1 cup water¾ cup sugar juice of half an orange4-5 peels of fresh orange2-3 slices of ginger2 sprigs of rosemary2 whole peppercorns1 x 2 inch cinnamon stick½ star anise2 cloves Recipe Instructions Throw all the ingredients together in a pot and bring to a boil and allow to cook away for at least 15 minutes, until the sugar has dissolved and the kitchen is fragrant!How to use:Add a teaspoon to an old fashioned cocktail, rum + coke drink, martinis etc. and even a tsp into a cake batter

Thirst Quenchers Yes, a new home, for me means a few extra happy hours in the week – because there’s always a reason to celebrate A classic gin cocktail is a bees knees cocktail – one that originates from Prohibition Era – or so the story goes. Speakeasies had homemade alcohol kept in bath tubs for service and to reduce the strong taste and aroma of the alcohol, honey and lemon were added. Now of course, it’s by choice! Honey syrup though, is ridiculously easy thing to make and store in the fridge, because this is also a healthier sweetener option for iced teas and other drinks you need sugar for! The Recipe Serves Ingredients Honey Syrup: 100g honey 100g hot water Cocktail: ¼ cup gin 1 ½ tbsp lemon juice 1 tbsp honey syrup ice optional: fresh sage / lavender bitter / bitter orange bitter / lemon peel Instructions Honey Syrup: Simply stir together to thin out the honey Store in a glass bottle and refrigerate Cocktail: In a shaker, add the honey syrup, lemon juice and gin, and give it a stir (in the shaker, add any other flavouring add-ons as listed above) Add ice and shake Pour into a cold glass

Thirst Quenchers Our Calming Brew is a multi-tasking one, as you’ve seen the past few posts. The chamomile flower has intense sedating powers to help calm the nervous system, relax the mind and soothe the soul. Lavender is equally as powerful and when they are put together – it is a force to reckon with. Infusing the brew into milk offers a floral latte, sweetened with a little bit of honey and vanilla. This recipe is a milk-based latte – which is an ideal bedtime drink, but also works wonders as a morning sip for those days when you wake up anxious, stressed and overthinking everything in life! The Recipe Serves Serves: 1 | Time: 20 mins Ingredients 1 cup milk of your choice (whole, skim, soy, oat, nut) 2 tsp Calming Brew 1 tsp Eucalyptus Honey ½ tsp vanilla extract Instructions Put the milk and brew together in a small saucepan and place on low heat Allow the milk to come to a gentle simmer, never to boiling point Strain the milk through a sieve into your serving mug Stir in honey and vanilla Serve NOTE: for vegans, use dairy-free milk option and substitute honey with agave syrup, coconut sugar or maple syrup
