A classic gin cocktail is a bees knees cocktail – one that originates from Prohibition Era – or so the story goes. Speakeasies had homemade alcohol kept in bath tubs for service and to reduce the strong taste and aroma of the alcohol, honey and lemon were added. Now of course, it’s by choice!
Honey syrup though, is ridiculously easy thing to make and store in the fridge, because this is also a healthier sweetener option for iced teas and other drinks you need sugar for!
The Recipe

Ingredients
Honey Syrup:
100g honey
100g hot water
Cocktail:
¼ cup gin
1 ½ tbsp lemon juice
1 tbsp honey syrup
ice
optional: fresh sage / lavender bitter / bitter orange bitter / lemon peel
Instructions
Honey Syrup:
Simply stir together to thin out the honey
Store in a glass bottle and refrigerate
Cocktail:
In a shaker, add the honey syrup, lemon juice and gin, and give it a stir
(in the shaker, add any other flavouring add-ons as listed above)
Add ice and shake
Pour into a cold glass
