Butter + Jam Bread Pudding

This is my easy-peasy kid’s breakfast morning recipe. It works wonders with all age groups though and I have once added rum-soaked raisins as well, or hints of orange zest, an added lashing of brandy, sometimes allspice, sometimes frozen berries for a red jolt.

I’ve never made anything easier, that made a huge impact.

When I serve this in the morning, I also pair it with hot chocolate and create a bar with toppings – caramel sauce, chocolate sauce, nuts, sprinkles, chai spices, maple syrup and whipped cream – which work as toppings for both items.

And let me tell you, the kids have a jolly good time!

INSTRUCTIONS

1 Pour the melted butter into the bake dish, ensuring coating all sides
2 Slice the bread into fairly thin but firm slices
3 Spread jam on one side of each bread slice and arrange into the casserole dish, tightly packed, standing upright
4 In a bowl whisk together very well the eggs, milk, sugar, cinnamon, vanilla and pour the batter over the bread
5 Sprinkle extra sugar on top
6 Allow to sit for 5 minutes on the counter top before baking for 15 minutes at 165C
7 Serve with maple syrup and cream
9 Make ahead tip:
10 Prep the bake dish with the sliced jammed breads and cover with cling wrap and refrigerate.
11 The next morning, simply whisk up the batter, pour over and bake
13 Reheating tip:
14 Pour some milk on top before warming up in the oven

1 loaf of semi-soft baguette or loaf bread (plain) - 300 g
½ cup jam of your choice
¼ cup butter, melted
3 eggs
350 ml milk
1 tbsp granulated sugar
1 tsp cinnamon powder
1 tsp vanilla extract
Extra granulated sugar for topping

Whenever I get my hands on a packet of fresh herbs I like to use them up in all ways possible before they get spoilt. Sage is one of my favourite – goes in eggs, pastas, potatoes, cocktails, into a syrup, on fruit with some salt and sugar – the possibilities are endless. But my honest favourite way is pairing sage with pumpkin – a match made in true heaven. I sauté up the pumpkin slices with garlic, leeks and then the sage is added in for its delightful warm, peppery delicious flavours. The egg batter goes in with some peas and cheese and always, always a pinch of nutmeg to make a delicious frittata. I have this for dinner multiple times a month – but if you have a brunch party – go ahead whip this one up!

Many of you have tried our Black Sesame + Cinnamon Trail Mix as a great snack, but being a recipe developer, I always find ways to add a few spoon full into various recipes. I love adding the crunchy bits into salads, but what this snack really works for is breakfast. This snack mix has caramelised bits of oats and black sesame separately, which works like a granola, along with pumpkin seeds, soya beans and delicate rose petals and so it is my go-to option for rushed mornings, and especially during hot summer mornings. A quick whisk of Greek yoghurt with Eucalyptus Honey, vanilla bean and a pinch of cinnamon or cardamom powder and top it with some juicy mango slices and a big spoon of the trail mix which give me the right amount of energetic boost in the morning!
