GF Oatmeal Cookies

I have been a staunch non-dieter all my life. I have been told that I can easily lose the last few pounds required, and I always answer with a ‘yes, I could’, and give them the sweetest smile, that one usually reserves for the devil’s spawn. That’s the thing about life isn’t it? We know we can do this or that. But do we want to? Do we care enough?

In my case, I rarely find the required balance between can, should and do I honestly care that much? I can give up chocolate. I should give up chocolate. But will I? Ha!

But sometimes, you are faced with challenges, and today, it was gluten free cookies. There’s a long story behind it, which I will not bore you with, but let me just say these cookies look good, taste good and have a sneaky habit of appearing more than once in your plate.

Note: these are not intensely sweet. I have occasionally made this recipe with more quantities of dark chocolate as a personal preference, and I have also once used good quality orange flavoured and ginger flavoured chocolate, all with ridiculously amazing results.

Use this recipe as a base to experiment with flavours and twists!

This is my easy-peasy kid’s breakfast morning recipe. It works wonders with all age groups though and I have once added rum-soaked raisins as well, or hints of orange zest, an added lashing of brandy, sometimes allspice, sometimes frozen berries for a red jolt. I’ve never made anything easier, that made a huge impact. When I serve this in the morning, I also pair it with hot chocolate and create a bar with toppings – caramel sauce, chocolate sauce, nuts, sprinkles, chai spices, maple syrup and whipped cream – which work as toppings for both items. And let me tell you, the kids have a jolly good time!

Oatmeal in a mithai flavour format? This is a real killer with the elderly who love sweets, but need a bit of fibre alongwith. I make the oatmeal the old-fashioned way in water with a pinch of salt, and for flavour i char-grill pineapple bits, add kesar, elaichi, badam and pista. If you like, add a dash of malai at the end and stir well! All the richness without the guilt!
