I have been a staunch non-dieter all my life. I have been told that I can easily lose the last few pounds required, and I always answer with a ‘yes, I could’, and give them the sweetest smile, that one usually reserves for the devil’s spawn. That’s the thing about life isn’t it? We know we can do this or that. But do we want to? Do we care enough?
In my case, I rarely find the required balance between can, should and do I honestly care that much? I can give up chocolate. I should give up chocolate. But will I? Ha!
But sometimes, you are faced with challenges, and today, it was gluten free cookies. There’s a long story behind it, which I will not bore you with, but let me just say these cookies look good, taste good and have a sneaky habit of appearing more than once in your plate.
Note: these are not intensely sweet. I have occasionally made this recipe with more quantities of dark chocolate as a personal preference, and I have also once used good quality orange flavoured and ginger flavoured chocolate, all with ridiculously amazing results.
