It's mango season, so we are now adding mango wherever possible! This millet salad has all the summer feels, with refreshing cucumber and capsicum, and nutritious foxtail millet.
The dressing is a fresh mango blitzed with green chilies, ginger, lemon, olive oil and honey - making it a perfect summer dish. This salad carries well, so a perfect picnic or potluck dish

½ cup foxtail millet, cooked
Cucumber pieces
Red capsicum pieces
Spring onions, finely chopped
Chia seeds
Chopped almonds
Dressing:
1 mango
A small piece of ginger
1 tsp olive oil
1 tsp lemon juice
½ tsp salt
1 tbsp honey

Add all the ingredients of the dressing into a mini mixer
Blend until a smooth sauce, adding water if you need to
