This was the recipe I made for the September 2025 Cookbook Club and whilst the original had grapes, my mother did not allow me them bc of the cold I had (almost 40 and still need the wrath of my mother!). Oranges work beautifully here and the marinade-cum-dressing with toasted fennel seeds are just a brilliant combination!
The Recipe
2-4
Ingredients
1 orange, sliced into round segments, peeled
2 tbsp white wine vinegar
2 tbsp olive oil
½ tbsp fennel seeds, toasted and slightly crushed
1 tbsp brown sugar
1 garlic clove, minced
Salt and pepper
Fresh oregano or thyme leaves
1 burrata or buffalo mozzarella ball
2 tbsp white wine vinegar
2 tbsp olive oil
½ tbsp fennel seeds, toasted and slightly crushed
1 tbsp brown sugar
1 garlic clove, minced
Salt and pepper
Fresh oregano or thyme leaves
1 burrata or buffalo mozzarella ball
Instructions
In a bowl mix together the white wine vinegar, olive oil, fennel seeds, sugar, garlic, salt and pepper and herbs
Place the orange slices in the marinade
Let it sit in the fridge for up to 12 hours
When ready to serve, remove the orange Tupperware from the fridge
Place a pan on high heat
Then grill the orange slices on high heat until lightly charred on both sides
Place the orange slices on a plate and the burrata cheese in the center and spoon the rest of the marinade on top
Serve!
