It was a Diwali party and a dear friend asked for a spicy ginger cake - and these kind of requests are what i live for! i used a homemade pumpkin spice blend which has dry ginger powder with allspice, cinnamon, nutmeg, cloves, black pepper. to that i added extra cinnamon, nutmeg and fresh ginger and this is now a cake i relish with a morning coffee!

The Recipe

Ingredients

1 ¼ cup flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
2 tsp pumpkin spice
1 tsp cinnamon
Pinch of nutmeg
½ cup vegetable oil
½ cup brown sugar
3 tbsp honey
2 eggs
2 tsp vanilla extract
2-3 tbsp grated fresh ginger
¼ cup milk
1 cup chopped dark chocolate

Instructions

Grease and flour a 9 inch cake tin
Preheat the oven at 180C
In a mixing bowl, whisk together oil, sugar and ginger well
Then add the eggs and vanilla and whisk for 3-4 minutes
Then fold in the dry ingredients with a spatula
Then add the milk and chocolate and fold well
Pour into the tin and bake for 25 minutes
Remove from oven and allow to cake to cool completely
