Grilled Pineapple Salad - Asian Style

This salad is the perfect side dish to a curry and rice or noodle meal. the freshness of sweet pineapples, gently grilled with Chinese 5 spice powder and chilies, a dash of soya sauce and lot's of fresh basil and spring onions - this dish is a burst of flavour and color on the table. i also like to make this dish much ahead to allow the flavours to really infuse!

INSTRUCTIONS

1 Place a large pan on high heat
2 Mix together the sugar, salt and Chinese 5 spice in a large plate
3 Dip the pineapple slices in the mix and place the slices on the hot pan to gently caramelize until light charred on both sides
4 Place on serving plate and allow to cool
5 In the same pan gently toast the cashews and chilies for a few seconds and place over the pineapples
6 On top place the green onions and Thai basil
7 In a separate bowl mix together dark soya sauce, water, ginger and pour over the salad and let rest for an hour in the fridge before serving

ingredients

1 pineapple – cored and sliced
4 tbsp brown sugar
1 tsp salt
2 tsp Chinese 5 spice
1-3 green or red chilies, sliced
2 tbsp dark soya sauce
1 tbsp water
1 tsp minced ginger
Handful of green onions – green part, sliced
Handful fresh Thai basil
Handful of toasted and crushed cashews

Adapted from SIMPLE by Ottolenghi This was the recipe I made for the September 2025 Cookbook Club and whilst the original had grapes, my mother did not allow me them bc of the cold I had (almost 40 and still need the wrath of my mother!). Oranges work beautifully here and the marinade-cum-dressing with toasted fennel seeds are just a brilliant combination!

Mango season means mangoes are innocently weaving its way into all our meals. This is a great way to add a fresh salad to any meal with a simple delicious dressing that complements the sweetness of mangoes beautifully. The crunch of peanuts and sesame seeds is just brilliant juxta positioning. For this salad I am partial to Badami Mango for it’s sturdiness and tartness. But alphonso works just as well.
