Mango season means mangoes are innocently weaving its way into all our meals. This is a great way to add a fresh salad to any meal with a simple delicious dressing that complements the sweetness of mangoes beautifully. The crunch of peanuts and sesame seeds is just brilliant juxta positioning.

For this salad I am partial to Badami Mango for it’s sturdiness and tartness. But alphonso works just as well. As do all other mangoes – it is the king of fruits for a reason!

The Recipe

Ingredients

½ mango, chopped into bite sized pieces (I like using Badami mango for this salad)
½ cucumber, chopped into bite-sized pieces
Handful of fresh basil
1-2 spring onions (white part only), finely chopped
1 green chili, finely chopped
Handful of toasted peanuts
1-2 spoons of toasted sesame seeds

Dressing:
1 tbsp light soya sauce
½ tbsp rice wine vinegar
½ tbsp water
1 tsp ginger-garlic paste
Heavy pinch of castor sugar
Dash of white pepper powder
1 green chili finely chopped

Instructions

Stir the dressing together well
Then add all the salad ingredients and toss well
Serve cold!
