The Perfectly Roasted Garlic

Over the short life span of Kitchen Therapy, I’ve used roasted garlic quite a few times. [ Roasted garlic + truffle oil mac n cheese, roasted garlic butter, roasted potatoes w lemon dill sauce, roasted rosemary + lemon potatoes]
Clearly, I am absolutely in love with garlic. I’m writing this post from bed as I am completely under the weather and it has been horrible to be this ghastly sick (fever, cough, cold, body pains).
To get back to the purpose of the post – roasted garlic – it is one of the best remedies to a common cold (real handy right now!)
Garlic is rather underrated, but is actually filled with much goodness for the soul. It is high in Allicin, which has a ton of health boosting properties, low in calories, but high in Vitamin C, B6 and Manganese. It is supposedly an aid to lower blood pressure, help with heart ailments and of course the common cold. The garlic has been used for centuries, mostly for health and medicinal means. The use of garlic has been well documented by civilisations such as the Egyptians, Babylonians, Greeks and the Chinese.

To roast garlic, is essentially to soften it within its skins, which lends to the sweetness, removing the pungency and creating an aromatic, bursting with flavour garlic cloves. I use this on just about anything and mixing with butter let’s it stay good for long, and is a quick shortcut to garlic bread (my personal favourite).
Roasting garlic is the easiest thing you will ever do in a kitchen. Simply cut the whole garlic in half, drizzle with olive oil, salt and herbs, wrap in foil and bake in an oven for a good 35-45 minutes. Once cooled, gently squeeze out the soft garlic and use on bread, salad dressing, butter, pasta, lentil dishes, potatoes, veggies… anything really.

 

The Recipe
Serves Prep time: 5 mins  |  Cook Time: 45 mins

Ingredients

  • 1 whole garlic
  • 1 1/2 tsp olive oil
  • 1/2 tsp salt
  • 1 tsp dried herbs

Instructions

  • Cut the garlic in half with skins on. The cloves must be half exposed.
  • Drizzle olive oil on top with the seasonings.
  • Wrap in foil and close well.
  • Bake in a preheated oven at 200C for 35-45 minutes.
  • Let cool before squeezing out the cloves.

To me, it’s very imperial.” – Diana Vreeland Apple chutney is one of those sweet, spicy and tangy pastes that can instantly take a dish from normal to fancy! I am a big fan of sandwiches and I can eat them at any given time. And I like to experiment with them! This apple chutney is a change from the usual chutneys served and is a good substitute to mayonnaise and ketchup in sandwiches. You can also use this in salads, wraps, and as exotic chutney on a fancy cheese plate. I have even stuffed this in an aloo tikki and served with it with green chutney and it was a big hit. [yumprint-recipe id=’4′] The Recipe Serves Ingredients 1 apple, finely diced ½ onion, diced 1 tbsp brown sugar ¼ cup raisins or cranberries 1 tsp red chilli flakes 1 tsp turmeric 1 tsp mustard seeds ½ tsp asafetida (hing) 1 bay leaf ¼ cup apple cider vinegar 1 tsp vegetable oil Salt to taste Instructions Heat vegetable oil in a non-stick semi-deep pan at low heat and add the mustard seeds. Once they start to pop, add in the hing, bay leaf, chilli flakes and turmeric. Once they have cooked, add in the onions and salt. Sauté until slightly transluscent and then add in the brown sugar. Once the sugars have caramelized, throw in the apple cubes and stir to coat each apple with the masalas. Then pour in the apple cider vinegar and raisins or cranberries. Cover the pan and let the chutney cook for around 30 more minutes while stirring occasionally. Then remove the lid and squash the softened apples with a potato masher if required, and allow to cool, off the stove. Store in an airtight jar. This chutney should stay well in a refrigerator for about a week.
