This is a healthy, satisfying salad that has the power to stand on its own as a meal – and I say this with full confidence. Organic black rice which is in itself a nutritious powerhouse, tossed with roasted pumpkin cubes is a lethal combination for energy levels and nutritious goodness. Adding chopped dates, almonds and pomegranate arils level up the quotient. Chevre cheese by Spotted Cow Fromagerie – rounds it all up together for the taste buds.

The dressing is the thing of beauty here – orange juice + pomegranate juice and marinated onions along with the regulars – a simple concoction, but does full justice to the good soulful medley.

The Recipe
Serves

Ingredients

  • • 2 cups cooked black rice
  • • 250g pumpkin, cubed and roasted with salt
  • • 1 pomegranate
  • • 1/3 cup chopped almonds
  • • handful chopped dates
  • • ½ cup fresh mint leaves
  • • handful of crumbled Chevre by Spotted Cow Fromagerie
  • Dressing:
  • • ¼ cup pomegranate juice
  • • ¼ cup orange juice
  • • 2 tbsp extra virgin olive oil
  • • 1 small onion finely chopped onion
  • • 1 tsp salt
  • • 1 tsp pepper

Instructions

  • • Stir the dressing ingredients together and keep refrigerated in an air tight container until ready to serve
  • • Toss the salad ingredients together and serve cold with dressing

This is a nutritious salad that is delicious, easy to whip up and also stays incredibly well for a day or two. Tahini is full of calcium and good stuff, and teamed with foxtail millet, you’ve got the two parts of nutrition down. Then in enter the roasted vegetables and whilst I’ve used baby corn, capsicum and leeks, you can throw in anything else such as red onions, broccoli, peas, pumpkin, spring onions… the list goes on!

This is one of the easiest, yet elegant looking salads that make it look like you’ve made a lot of efforts and perhaps toiled for hours in the kitchen. The zucchini must be sliced very thin – perhaps a mandolin works best in this case. Most people simply marinate these in a vinaigrette for a few hours and eat raw, however I had people over, who I didn’t want experiment so much with – and the safest route was to gently char grill on a hot pan with no oil, and then marinating overnight, ready for an early brunch. I put luscious bocconcini cheese over the salad, with lot’s of pomegranate arils for a pop of colour and there you go – a beauty to the eye!
