There is something so cooling and refreshing about this cold summer salad, with a kick of spice, umami of soya and what this really goes well with is a crisp white wine. I’ve also served this with lettuce cups to make it more fun, but really, on its own it is wonders with explosions of flavours.
½ cup cucumber slices, quartered
a few orange segments
2 spring onions, sliced
2 green chilies, diced
fresh mint leaves - optional
5 tbsp peanut sauce (see recipe under watermelon + peanut salad)
3 tbsp light soya sauce
pinch of flaky salt or pink salt
toasted sesame seeds and peanuts
optional are lettuce cups!
