Crispy Roasted Potatoes

Potatoes are simply the ultimate comfort food for us. This recipe is again inspired by Instagram / Tik Tok reels - I simply could not resist making these.

The potatoes get done within an hour - which is not bad considering that they are double cooked - once par boiled and later in the oven - but my God, these are glorious! I could eat the whole pan myself with a side dish of condiments - dijon mustard, sour cream, ketchup, chili sauce, aioli, pesto, marinara.... the list goes on!

  • Recipe Ingredients

1 kg potatoes
3 tbsp olive oil
1 tsp salt
5-7 cloves garlic
½ tsp black pepper
fresh rosemary or thyme – 2 sprigs

  • Recipe Instructions

Place a large pot of water to boil with 1 tsp salt
Peel the potatoes and cut into medium to large pieces
Once the water has come to a boil add the potatoes in to boil for about 15 minutes – until the potato is cooked through firmly for a fork to go through – ensure not to over boil
Turn on the oven at 200C and place a large baking dish with 2 tbsp olive oil to heat
Once the potatoes are boiled, drain out the water and place the potatoes back into the pot and give the pot a few shakes so that the edges of the potatoes become rounded
Bring out the hot baking dish from the oven and throw in the garlic cloves, fresh herbs, the potatoes, another tablespoon of olive oil and salt and pepper
Bake for 40 minutes or until the potatoes are crisped up – giving the dish the occasional turn around every 15 or 20 minutes
Remove from the oven and serve hot – with sour cream, Dijon mustard or ketchup!
