Paneer Peanut Satay [VIDEO]

Party appetizers to me means – large portions, easy prep, and even simpler easy to source ingredients – and if they come from the pantry – even better!

This is a recipe for easy Paneer Peanut Satay – a marinade made out of fresh coconut water and peanut butter, paneer tossed into it and grilled within minutes just before serving. Make them fancy by cutting them into small bite sizes on a long skewer to imitate lollipops!

Ingredients

  • 1/2 cup Peanut Butter
  • 1/4 cup Fresh Coconut Water
  • Minced Garlic
  • Dried basil Leaves
  • Chilli Flakes
  • Pinch OF Salt
  • 1 tbsp Soya Sauce
  • Paneer Cubes
  • Oil

Instructions

  • 1. First begin by making the peanut butter marinate, so take half cup of peanut butter and fresh coconut water.
  • 2. Put minced garlic, dried basil leaves and chilli flakes along with some salt and soya sauce.
  • 3. Give it all a whisk in order to make a paste.
  • 4. Take the paste out in a big bowl.
  • 5. Take a few wooden sticks and place paneer cubes on them.
  • 6. Coat the paneer cubes well in the peanut butter paste.
  • 7. Take a griller pan and grease some oil on it.
  • 8. Place the cubes in the pan when it is hot and fry them from both the sides till they are done.
  • 9. Serve it in a plate with some Garnish of spring onion greens.

Yes, I am catching onto the viral trends, albeit a lot later than many, but at least I finally am there! The baked feta idea came to me when I was consulting Toska Chocolate House when we started having feta in our ingredient list for a salad - one you must try if you’re in Ahmedabad. We serve it baked with homemade spicy tomato chutney, olives, herbs and lots of love! Feta is not my top choice cheese – not because of its taste, but rather the lack of shelf life. I’m a sporadic and moody eater, and we all know once you open that pack of feta, you pretty much need to inhale it within a day before it gets too sour. Which is why I have always refrained from buying it. This recipe I share here, is again stemmed from one of those nights where I found half a block of feta, just beginning to sour, so not suited for a cold salad. I thought, let’s bake it and see what happens. The flavours here are sweet, salty, spicy and crunchy – highlight is the fried almonds which is a sheer delight on its own, but even better here. This is one of those recipes that is put together by instinct rather than meticulous measurement – so keep that in mind when assembling and feel confident to adjust ingredient amounts as per your heart’s desire!

Savoury The outdoors has become more precious now, more than ever. When you’re asked to stay indoors, stay home, work from home, not go out for anything other than essentials, the human mind automatically rebels. And so, like other humans, I spend all my time in the garden. Granted, I never spent enough time at home before, spending perhaps 90% of a day at the office or other work site and so never really truly appreciated my home. While most have been hating the #WFH home routine, I am revelling in that. I cannot put it in any other way than: I love my home, I love being at home and I don’t want to leave my home. So, we are eating meals in the garden and using the BBQ grill at least once a week – and one of the best items are baby potatoes – marinated in mustard oil which lends the delicious aroma and flavour. The Recipe Serves Ingredients 20 baby potatoes, par boiled with skin Marinade: 1/8 cup mustard oil 1 tbsp mustard powder 1 ½ tsp salt 2 fresh red chilies Instructions Mix all the marinade items together in a large bowl that has a lid Toss the par boiled potatoes into the bowl, cover and refrigerate for at least an hour or longer, until ready to grill Before cooking, bring the potato bowl out to room temperature skewer them into a long stick grill on a hot grill / coal grill for 5 minutes or so, turning over often
