A box of beautiful red and pink Swiss chard landed up at my doorstep and it made my day! And reminiscent of my Kale Fried Rice, I wanted to play with garlic here. With ajar of ricotta lying in the fridge, it was like destiny had found us!
Here is a super simple, quick and easy recipe that has a bit of lemon zest to spruce it up and eating your greens never felt better!
The Recipe

Ingredients
1 cup pasta (uncooked) + its water
1 – 2 cups Swiss chard, chopped stem and leaves
2 tbsp garlic, minced
2 tbsp finely chopped onion
1 tbsp olive oil
1 tbsp butter
1 tsp lemon zest
100g ricotta cheese
2-3 tbsp cream
1 tsp salt
½ tsp pepper
pinch of nutmeg
Instructions
Cook the pasta in salted water asper the box instructions
Drain and reserve a cup of the pasta water
In a large pan, heat the butter and olive oil with garlic and onions and cook gently for 5-7 minutes, until fragrant and garlic is crispy, then add the Swiss chard and sauté with salt for another 3-5 minutes
Once this is done, throw in the cooked pasta and few spoons of the pasta water
Then add the ricotta and cream, lemon zest, pinch of nutmeg and pepper
Stir well to make everything is along with and stir to create a sauce
Drizzle some extra virgin olive oil on top and serve
