Swiss Chard, Ricotta + Lemon Pasta

A box of beautiful red and pink Swiss chard landed up at my doorstep and it made my day! And reminiscent of my Kale Fried Rice, I wanted to play with garlic here. With ajar of ricotta lying in the fridge, it was like destiny had found us!

Here is a super simple, quick and easy recipe that has a bit of lemon zest to spruce it up and eating your greens never felt better!

The Recipe

Ingredients

  • 1 cup pasta (uncooked) + its water
  • 1 – 2 cups Swiss chard, chopped stem and leaves
  • 2 tbsp garlic, minced
  • 2 tbsp finely chopped onion
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp lemon zest
  • 100g ricotta cheese
  • 2-3 tbsp cream
  • 1 tsp salt
  • ½ tsp pepper
  • pinch of nutmeg

Instructions

  • Cook the pasta in salted water asper the box instructions
  • Drain and reserve a cup of the pasta water
  • In a large pan, heat the butter and olive oil with garlic and onions and cook gently for 5-7 minutes, until fragrant and garlic is crispy, then add the Swiss chard and sauté with salt for another 3-5 minutes
  • Once this is done, throw in the cooked pasta and few spoons of the pasta water
  • Then add the ricotta and cream, lemon zest, pinch of nutmeg and pepper
  • Stir well to make everything is along with and stir to create a sauce
  • Drizzle some extra virgin olive oil on top and serve
