TEMPURA WITH YUZU MAYO DIPPING SAUCE

 

Japanese food is synonymous with tempura – light crispy bhajiyas, dipped into a delicious world umami – they get it so right and I had to make my attempt at going all out for this recipe.

Here I’ve created an eggless tempura batter using ingredients you probably have in your pantry (i.e. another reason to make it in a jiffy!). this batter is whisked in minutes, and the trick is to leave the it in the fridge for at least 10 minutes before dipping in the goodies. Today, I use a limited selection – baby corn, red pepper slices, eggplants and onions; but the list is endless – carrots (steamed slightly), sweet potato, tofu, avocado, zucchini…

The homemade mayo is the star of this recipe and with the brightness of the Yuzu Extract – it is just brilliant. This homemade mayo is ridiculously easy, and requires just a little bit of an arm workout which I’m not sorry about, because you will compensate the loss with a big dollop of this mayo! I can assure you that you will never eat packaged mayo after you try this at home.

For those who do not have eggs, simply stir in 1 teaspoon of the Yuzu Extract to eggless mayo, along with a minced garlic clove and soya sauce.

The Recipe
Serves 4

Ingredients

  • 1 cup Tempura Batter
  • 1 cup Rice Flour
  • 4 tbsp Corn Starch
  • 2 tsp Baking powder
  • 1 tsp Salt
  • Pinch Sugar
  • Yuzu Mayo
  • 1 Egg yolk, room temprature
  • 120ml Vegetable oil
  • 1/2 tsp English Mustard
  • Pinch Sugar
  • 1 tsp Vinegar
  • 1 tsp Soya sauce
  • 1 tsp Sprig Yuzu Extract
  • 1/2 tsp Minced Garlic
  • 1/4-1/2 cup Cold water
  • 1/2 tsp Salt

Instructions

  • Whisk the yolk with mustard, sugar, salt and vinegar.
  • Slowly, while whisking add the oil, initially, drop by drop.
  • Whisk vigorously until you get the desired consistency.
  • Then whisk in the soya sauce, yuzu extract and garlic.
  • Whisk all the ingredients together to make the batter.
  • Place the frying oil in a large vessel and place on heat.
  • Coat all the vegetables lightly in rice flour.
  • Once the oil starts to bubble, dip each vegetable into the batter and then place carefully into the oil.
  • Once the vegetables are fried and batter has cooked through, remove with a slotted spoon and place on paper towel.
  • Soak of excess oil and place in serving platter with the Yuzu Mayo dipping sauce.

Yes, I am catching onto the viral trends, albeit a lot later than many, but at least I finally am there! The baked feta idea came to me when I was consulting Toska Chocolate House when we started having feta in our ingredient list for a salad - one you must try if you’re in Ahmedabad. We serve it baked with homemade spicy tomato chutney, olives, herbs and lots of love! Feta is not my top choice cheese – not because of its taste, but rather the lack of shelf life. I’m a sporadic and moody eater, and we all know once you open that pack of feta, you pretty much need to inhale it within a day before it gets too sour. Which is why I have always refrained from buying it. This recipe I share here, is again stemmed from one of those nights where I found half a block of feta, just beginning to sour, so not suited for a cold salad. I thought, let’s bake it and see what happens. The flavours here are sweet, salty, spicy and crunchy – highlight is the fried almonds which is a sheer delight on its own, but even better here. This is one of those recipes that is put together by instinct rather than meticulous measurement – so keep that in mind when assembling and feel confident to adjust ingredient amounts as per your heart’s desire!

Salads,Savoury A large big bowl of salad for lunch can be misleading to those who enjoy eating. I was never one for the greens, and my mother will tell you, I am still not, but if dressed up and made all fancy, a salad bowl does me good for lunch on most days. This Asian sesame salad is one such bowl. The dressing although simple, is bursting with flavour, thanks to SPRIG’s Artisanal Toasted Sesame Oil. And the nourishing greens and mix of raw and grilled vegetables add layers of depth to the salad. Toasted sesame seeds and peanuts add the crunch factor. If you would like to add a boost of protein, go ahead and add a hard boiled egg or some crumbled paneer. Note: The dressing can be made in advance and stored in the fridge for up to 2 days The Recipe Serves 4 Ingredients 1/2 cup Shredded lettuce 1/4 cup baby corn, halved and sliced lenthwise 1/4 cup chopped spring onions 1/4 cup chopped tomatoes 1/4 cup chopped cucumbers 1/4 cup chopped red and green peppers 1/2 cup broccoli florets 1/4 cup orange slices 3 tsp Toasted sesame seeds 1 tbsp Toasted peanuts, chopped 2 tsp SPRIG Toasted Sesame Oil 3 tsp Light soya sauce 1 1/2 tsp Rice wine vinegar 1 tsp Honey 1/2 tsp Ginger, grated 1/2 tsp Garlic, minced 1/2 tsp Red chilli flakes 1/2 tsp Orange zest Instructions Place a non-stick pan on high heat. Throw in the baby corn and broccoli florets to roast with a pinch of sugar, stirring occasionally for 6-8 minutes. The vegetables should be slightly blistered. Remove from heat to cool. Meanwhile, stir the dressing ingredients together. Keep in the fridge until ready to serve. Assemble the remaining salad fillers together in a serving bowl with the broccoli and baby corn. Pour the dressing over and sprinkle the sesame seeds and peanuts on top.
