This is the last one of our Bread Series and this lovely collaboration and I’m already having some withdrawal symptoms. This delicious ragi bread from Le Artisan Boulangerie is gorgeous with some butter in the morning and even better in this version of the classic chilli cheese toast.

During my childhood visits to India, my grandfather often took me to Sea Lounge for afternoon tea – it was as classic as the classic movies, old school and oh-so-very elegant. But the food was real, unpretentious and down-to-earth and very, very good. The chilli cheese toast is not an item I would imagine in a 5-star posh menu, but that’s me being unfairly arrogant.

So today, I thought, why not make this into a gourmet-ed up version, using a medley of cheeses such as cheddar, smoked cheese and some creamy ricotta. And because I cannot do without hot sauce, some hot sauce too!

Simply stir the filling up, spread on the bread slice and grill in the oven – easy, quick, tasty, and nostalgic too!

Ingredients

  • 4 ragi bread slices
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded smoked cheese
  • 1/4 cup ricotta
  • sliced green chillies
  • 1/2 tsp salt
  • 1 tsp hot sauce
  • 1 tsp dried herbs

Instructions

  • Stir the cheeses with ricotta, chillies, salt, hot sauce and herbs.
  • Spread on the bread slices and place in the oven or toaster oven for around 7-10 minutes at 180C.
  • Remove from oven and serve.

Roasted chickpeas caught my eye on Instagram and the rave around it got me intrigued. Now I know we have the fried chickpeas in chakna snacks, and all that jazz, but roasted? It sounded like a hell of a lot of work. But when faced with a dabbo of boiled chickpeas, and in no mood to make hummus, I thought, let me give this recipe a go. Fairly straightforward, the steps are easy. The seasonings I chose made them even more delicious, and yes, they were crunchy and delicious. But I thought a little more crunch would have been great, so I added a little hint of rice flour to the next batch. Once they are out of the oven, stir with the rest of the seasonings, and in my opinion, eat straight away, warm and full of flavour and love. Don’t bother placing in a jar and storing – it doesn’t last long enough.
