The Bread Series
Life has given me so much to be grateful for and I wake up each day saying ‘thank you’. With life’s buzzing pace, hectic work schedules, there is very little time left for just ‘me time’, and the early morning is the only hour I have to myself in the quiet. And I can’t help but wake up with a smile. With each passing year, life is becoming clearer, better and happier. Who said growing old sucks? Not me!
Now, this is a tried and tested recipe that resonates in every home and restaurant. Hummus is most frequently served as a dip, but when I got my hands on Le Artisan Boulangerie Pesto Bread I knew I had to slather a layer of hummus. This pesto loaf is delicious even on it’s own, dipped in extra virgin olive oil and sea salt. But paired with any type of filling, elevates the softness of the bread even more.
Hummus is incredibly easy to make and paired with sprinklings of sumac and za’atar and some juicy tomatoes and crunchy cucumbers and if you’re feeling a bit more indulgent, then add in some feta cheese or sliced cheddar cheese!
And remember, wake up saying a prayer, a thank you and most importantly, always smiling

The Recipe
Serves 2
Ingredients
- 4 Pesto Bread slices
- 1/4 cup hummus
- 6 tomato slices
- 6 cucumber slices
- sumac
- za'atar
Instructions
- Spread the hummus on the bread slices and sprinkle some sumac and za’atar on top.
- Layer tomato and cucumber slices and cover with the second slice of bread. Cut diagonally and serve.
