Kamini's Avocado Toast

This is something you definitely look forward to waking up to. I know you’ve seen many variations of the avocado toast and each one claims to be the best, but really this one is it for me. Yes, we mash the avocado pulp with garlic, lemon juice, salt and pepper. But the toast should be very well done, borderline-ing burnt, with a good layer of butter (garlic butter would be even better). Then of course some feta cheese is optional, since I had some of that in the fridge, but grana Padano works well, so does grated cheddar or blue cheese is the best in my opinion. Then the ultimate ingredient that brings it all together so well – honey with lots of chili flakes. Now I have used Sriracha and various other chili sauces, but the kick from dried chili flake is unbeatable, and paired with honey, this does me too good.

Trust me here, and give it a shot. You may start with a just a dash of honey, but with each toast you make, I am sure you will gradually increase the amount of honey.

You can also make hot honey and store for all future use!

INSTRUCTIONS

1 Take out the pulp of half an avocado in a mixing bowl
2 Add the garlic, olive oil, salt, pepper and lemon juice and mash together
3 Spread it over the hot buttered toast
4 Sprinkle chili flakes and feta cheese on top
5 Drizzle honey on top
6 Eat.

LAB X KITCHEN THERAPY X THE KITCHEN TRAIL   Finger sandwiches are an essential part of the Afternoon Tea or High Tea. It lends the wholesomeness to the in-between meal. For this menu, we aimed to cross promote the existing items that LAB makes in-house with the sole goal to make you try the various breads and understand how they can be paired with stellar ingredients. This menu consisted of two: Apple + Brie and the Edamame Hummus + Purple Cabbage   Apple + Brie: This sandwich was a super hit on the menu and converted even the staunchest traditionalist towards fusion. The soft Pumpkin Bread, which is an in-house specialty at LAB, pairs perfectly against spicy onion and thyme, along with sweet apple and savoury brie cheese. Note: in place of brie, can use any other strong flavoured cheese, like red Leicester, smoked cheese, or gouda   Edamame Hummus + Purple Cabbage: This is a beautiful play on colour and texture, where we have Ragi Bread which is indulgently healthy and coarse, paired with creamy Edamame Hummus and the best part – caramelised crispy purple cabbage. Purple cabbage is shredded into fine strip and grilled on high heat with a pat of salted butter and nothing else – it is simply delicious. Note: Edamame Hummus and Ragi Bread are both individually on sale at LAB Photography + Styling: The Kitchen Trail The Recipe Serves 2 Ingredients 2 pumpkin bread slice 1/2 tbsp honey mustard 4 thin slices of apple 2 brie slices 1 round slice of onion 1 fresh thyme sprig 1 leaf of lettuce 2 ragi bread slices 2 tbsp edamame hummus 10g purple cabbage, shredded 2 tsp butter pinch of salt Instructions Spread the honey mustard evenly and equally on both slices. On one slice, place the brie first, followed by thyme leaves, press down the onion slices. Press the apple slices on top. On the other slice, press down the lettuce. Fasten the sandwich. Cut lengthwise into half – creating two rectangular pieces. ook the purple cabbage in butter and some salt until caramelised on its own Spread 2 tbsp of edamame hummus on both slices Add the purple cabbage Fasten the sandwich Slice lengthwise to create two rectangles

Hot + spicy honey, sweet fleshy stone fruits, hard cheese, pungent basil and onions is the kind of match you see in beautiful Hollywood films. There’s a touch of romance, passion and a kind of l’amour that is best captured in good old-fashioned novels. Hot honey is a classic condiment that seems to have lost its shine over time, but I’m here to bring back it’s well deserved moment of glory. Stone fruits are my absolute favourite (Plum + Roses Brew is evidence) – as a kid, peaches were the first item on the picnic list for my Dad – mind you I don’t exactly recall the going on the picnic, but the preparations and excitement are still ingrained! Hot honey is basically honey, warmed up, brought to a boil once with a load of chilies – Thai bird chilies are my poison – or any kind of dried chili flakes works. Allow to cool, or simply drizzle over whatever you like. Hot honey goes with fresh fruits, on avocado, avocado toast (ask Kylie Jenner – she swears by adding honey and chili flakes separately over the toast), eggs, plain toast with cream cheese, French toast, khakhra, grilled cheese sandwich, bake dishes or roasts, grilled veggies… Here, what this honey does is adds the spice to the sweet and sour fruits, adds the crunch and strong bite through raw onions, fresh basil torn up and as always, a bit of cheese always does me real good. I opt for hard cheese like emmenthal or gouda, but a burratta, feta or ricotta does just as well. Its cheese, and there’s always room for it. Enjoy this beautiful love affair! I used Nature Therapy Eucalyptus Honey The Recipe Serves 1 Ingredients 2 peaches, sliced 2 plums, sliced ½ onion, sliced fresh basil sliced strong hard cheese (emmenthal or gouda) Hot Honey: ¼ cup Eucalyptus honey Eucalyptus Honey 1 tsp red chili flakes 4-5 thai bird chilies, crushed 1 tbsp water Instructions Hot Honey: Combine all the ingredients together and place on stovetop and bring to a boil Remove from heat and allow to cool down Salad: Arrange all the salad items together Drizzle 1-2 tbsp of the hot honey on top
