Straightforward recipe that does not need any substitutions. If you have a bigger muffin pan and liner, please go ahead and layer the streusel twice!

Ingredients
- Muffin Batter:
- 1 ½ cups flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup oil
- ½ cup castor sugar
- ½ cup yoghurt
- 1 tsp vanilla extract
- 1 tbsp espresso / prepared instant coffee – room temperature
- Walnut Streusel:
- ¼ cup finely chopped walnuts
- ¼ cup brown sugar
- 1 tsp cinnamon
- 1 tbsp instant coffee powder
Instructions
- Streusel:
- Mix all together and set aside
- Muffin:
- Prepare muffin tin with liners
- Preheat the oven to 180C
- Whisk oil and sugar first
- Then add yoghurt, vanilla, espresso and mix
- Then fold in dry ingredients
- Fill the cupcakes ¾ the way up
- Sprinkle a generous dose of the streusel on top
- Bake for 25 minutes at 180C
- Remove from the oven and allow to cool completely on a rack
