This is an easy recipe that you can continue over the year, without worrying about the seasonal availability! You can use red Fuji apples, Indian red apples, green Granny Smith apples… the cinnamon, nuts, sugars really provide for the perfect sweet start to the morning.

If you are willing to go an extra mile and don’t mind the tiny bit of butter – sauté the apples in some butter, sugar, cinnamon and nutmeg, maybe even a pinch of vanilla – this would really taste like an apple pie then.

The Recipe
Serves

Ingredients

  • 6 tablespoons of Quaker unrefined oats
  • ¼ cup diced apple
  • 1 teaspoon cinnamon powder
  • 1 tbsp of brown sugar OR honey
  • 1 tbsp of chopped hazelnuts
  • 1 tsp chia seeds
  • 1 tsp vanilla
  • ½ cup milk

Instructions

  • Add all the ingredients together and mix.
  • Let it soak overnight in the fridge.
  • In the morning:
  • Mix ingredients together with a spoon before eating
  • Tip:
  • For a stronger apple pie taste and if you have the time (and if for a big batch):
  • Saute the diced apples in a tsp of butter with 1 tbsp brown sugar, 1 tsp of cinnamon, pinch of nutmeg and a drop of vanilla essence.
  • Once the apples have softened and the aroma fills the kitchen enough, remove from heat. Allow to cool before adding into the oats, nuts and milk mixture.

Poached Plum Oatmeal

Plum season is here and a poached plum is quite desirable in the cool early mornings. pairing with good old fashioned oatmeal, i love this hearty breakfast. i drizzle more honey than necessary to combat the tart plums, and the crunch of pistachios on top is the best!

Pineapple Mithai Oatmeal

Oatmeal in a mithai flavour format? This is a real killer with the elderly who love sweets, but need a bit of fibre alongwith. I make the oatmeal the old-fashioned way in water with a pinch of salt, and for flavour i char-grill pineapple bits, add kesar, elaichi, badam and pista. If you like, add a dash of malai at the end and stir well! All the richness without the guilt!

Cinnamon Yogurt Pot

Many of you have tried our Black Sesame + Cinnamon Trail Mix as a great snack, but being a recipe developer, I always find ways to add a few spoon full into various recipes. I love adding the crunchy bits into salads, but what this snack really works for is breakfast. This snack mix has caramelised bits of oats and black sesame separately, which works like a granola, along with pumpkin seeds, soya beans and delicate rose petals and so it is my go-to option for rushed mornings, and especially during hot summer mornings. A quick whisk of Greek yoghurt with Eucalyptus Honey, vanilla bean and a pinch of cinnamon or cardamom powder and top it with some juicy mango slices and a big spoon of the trail mix which give me the right amount of energetic boost in the morning!
