This is hardly a recipe but then, there is some ingenuity that perhaps only a Gujarati can do. I know, I have read quite a few trolling comments for theplas being used in fusion recipes, but you know what? It works. It works for the quick moments of joy, where you need sustenance, filled with nutrition and bare minimal efforts. Theplas are something that tend to be omnipresent in most gujju-homes, so why not take that advantage? I like thepla or paratha as the vehicle here, as I try to avoid refined flour and yeast when possible. I stuff soft scrambled eggs with lot’s of spices, tomatoes and onions and of course green coriander. A layer of cream cheese and occasionally, chilli sauce spread on the thepla before the eggs go in. Easy, simple, delicious, packed with flavour!

Ingredients

  • Thepla
  • 2 eggs, scrambled with salt and pepper
  • finely diced tomatoes, onions, green chilies
  • 1 tbsp cream cheese per thepla
  • finely chopped coriander

Instructions

  • spread cream cheese on each thepla
  • fill with scrambled eggs
  • top with chopped coriander

This recipe is one for all of you pink lovers! In an attempt to increase my iron and hemoglobin levels I have been trying to find unique ways to bring beetroot into each meal. I have discovered that my love for the colour pink now also comes in the form of eggs! This is perhaps the most exciting thing that has happened to me in a while – pink scrambled eggs – grated beetroot, gently cooked until slightly caramelized, proper fried bits of garlic and some spinach and tomatoes. I promise you, you will be after this breakfast for the rest of your life!

This is my version of a good breakfast – eggs, toast and a delicious Indian tadka that we all can’t do without! I add a thick layer of cream cheese and spicy homemade techa (green chilies, peanuts and coriander brought together in a mortar and pestle) which is full of vitamin C and omega-C. the crunchiness of the curry leaves is a true delight!

Breakfast The Portuguese spice called piri piri has taken quite the country quite well – and it’s just as well, because I quite adore the spice! This Portuguese egg dish is their take on Shakshouka, but includes peppers, ricotta, lots of chilies and jalapenos. The most unique addition is that of fresh dill – which is seasonal, so I used dried dill instead. This baked-eggs version works well for a quick dinner routine, with a fairly therapeutic cooking style and delightful aromas that could possible harass the most impatient ones. And the beauty is that it can count as a low-carb, high protein dish. If you are wary of eggs, go ahead and add in strips of tofu or paneer. Expect a ‘part deux’ recipe when fresh dill is in season! Dill = suva ni bhaji   The RecipeServes 2 Ingredients 1/2 cup Tomato Puree 1 Sliced Onion 1 Chopped Green Pepper 2 Large Sliced Jalapeno Peppers 2 tsp Minced Garlic 2 Sliced Tomatoes 2 tsp Piri Piri 1 tsp Paprika 1 tsp Cumin 1 tsp Salt 1/2 cup Ricotta Cheese 3 Eggs Fresh Dill Instructions Take a medium sized non-stick pan and place on heat with olive oil, cumin and garlic. Once the garlic starts to sizzle, add the onions, pepper, jalapeno peppers, piri piri and salt. Sauté until translucent and fragrant. Add the tomato puree and simmer the sauce for at least 5-7 minutes as the flavours combine. Stir in the ricotta cheese and break the three eggs on top. Cover the pan and let cook for 5-7 more minutes or until the eggs whites have cooked and the yolk is just set. Remove and serve
