This is a real surprise package flavour bomb. Previously I've been hesitant to integrate too much fruit into savoury dishes, but this combination of sweet grilled pineapples cubes with lot's of spicy chilies, soya, ginger, garlic and basil is a sheer delight. I also add in scrambled eggs because that just makes it perfect.

The Recipe

Ingredients

1 cup, cooked rice
2 tsp sesame oil
3/4 cup finely chopped fresh pineapple
1 tsp brown or coconut sugar
1 tbsp minced garlic + ginger paste
1/2 onion, finely chopped
1 tbsp finely sliced green chilies
1 tsp red chili paste (optional)
1/2 cup finely chopped vegetables (carrot, capsicum, baby corn, etc)
10-12 fresh basil leaves
1/2 tsp salt
1/2 tbsp tamari or dark soya sauce
2 tsp rice wine vinegar
1/2 tsp white pepper
optional - 2 eggs scrambled

Instructions

Place a pan on high heat
Then add the pineapple to roast with a pinch of salt
Then add the sugar to caramelise for a few minutes
Then add the oil and fry the chilies, ginger, garlic and onion until fragrant
Then add the vegetables, fresh basil, salt and pepper and stir fry
Then add the soya sauce, vinegar, rice and mix
Add the scrambled eggs too if you are adding.
