Oatmeal in a mithai flavour format? This is a real killer with the elderly who love sweets, but need a bit of fibre alongwith. I make the oatmeal the old-fashioned way in water with a pinch of salt, and for flavour i char-grill pineapple bits, add kesar, elaichi, badam and pista. If you like, add a dash of malai at the end and stir well!

The Recipe

Ingredients
1 cup rolled oats
½ cup finely chopped pineapple
2-3 strands kesar
Pinch of salt
1 tsp sugar / sweetener of your choice
2 tbsp finely chopped or crushed nuts (almond, pista, walnut etc.)
½ cardamom pod seeds, crushed
Water, as needed
Splash of milk
To serve: maple syrup / honey / milk

Instructions
Place a pan on high heat
Then add the pineapple to grill for a 4-5 minutes until nicely charred
Then add the sugar and stir
Push the pineapple to one side and add the oats to toast gently for a few minutes
Then stir them together and add pinch of salt, kesar and stir
Then add the water little by little, continuously stirring
At the end add the nuts, cardamom and some milk and stir well
Serve warm with an additional splash of milk or maple syrup / honey if you need.
