Poached Plum Oatmeal

Plum season is here and a poached plum is quite desirable in the cool early mornings. pairing with good old fashioned oatmeal, i love this hearty breakfast. i drizzle more honey than necessary to combat the tart plums, and the crunch of pistachios on top is the best! 

INSTRUCTIONS

1 Place a pan on low heat and melt the butter
2 Then add the plum slices, cinnamon, sugar, salt and thyme and sauté
3 Cover the pan with the lid and let the plums poach for 5-7 minutes
4 Remove the plums
5 In the same pan, place the oats and toast the oats for a few minutes
6 Then add salt and slowly add water, whisking constantly, adding more water only once it is all soaked up
7 Keep stirring until the oats are cooked through
8 Transfer the oatmeal to a serving bowl
9 Top with the poached plums
10 Drizzle milk, honey or maple syrup and nuts over
11 Eat warm!

ingredients

Plums:
1 plum, sliced
1 tbsp butter
Pinch of salt
2 tsp brown sugar
2 sprigs of thyme

Oatmeal:
½ cup rolled oats
Pinch of salt
Water

To serve:
Milk, honey or maple syrup
Handful of chopped nuts

A pancake is a craving I get occasionally, but when it arrives, it does so with a heavy desire for an indulgent and glamorous plate. These pancakes are made from gluten free rolled oats, pulsed into a flour, and then whisked in with eggs, milk and the usual suspects. The star of the show though, is the caramelized bananas on top – because I like to be extra glam on certain mornings. The beauty of this batter is that it comes together real quick, but the cooking time may take a little longer than a gluten-filled pancake. But I assure you these are fluffy and a delight!

For easy breakfasts I love eggs – dunked around in some sort of cheesy concoction, I love it even more! For the longest time, I would opt for eggs on toast, but going for wheat and bread every morning is something I am not so comfortable. By that I mean, my stomach. So going for a gluten free vehicle option works better, so I thought of rice rotis – what better than that? These rotis turn out soft and pliable, taste delicious and with fried eggs, work wonders! I usually make some sort of homemade sauce or condiment for myself to last through the week for ease. The past week was a jar of pesto, so that was used on my tacos, along with caramelized onions and feta cheese, and a fried egg with lots of pepper! Enjoy!
