Plum season is here and a poached plum is quite desirable in the cool early mornings. pairing with good old fashioned oatmeal, i love this hearty breakfast. i drizzle more honey than necessary to combat the tart plums, and the crunch of pistachios on top is the best!
The Recipe

Ingredients
Plums:
1 plum, sliced
1 tbsp butter
Pinch of salt
2 tsp brown sugar
2 sprigs of thyme
Oatmeal:
½ cup rolled oats
Pinch of salt
Water
To serve:
Milk, honey or maple syrup
Handful of chopped nuts

Instructions
Place a pan on low heat and melt the butter
Then add the plum slices, cinnamon, sugar, salt and thyme and sauté
Cover the pan with the lid and let the plums poach for 5-7 minutes
Remove the plums
In the same pan, place the oats and toast the oats for a few minutes
Then add salt and slowly add water, whisking constantly, adding more water only once it is all soaked up
Keep stirring until the oats are cooked through
Transfer the oatmeal to a serving bowl
Top with the poached plums
Drizzle milk, honey or maple syrup and nuts over
Eat warm!
