Rose + Cardamom Granola Parfait

A yoghurt parfait cup was a common presence on the breakfast table during my college years and whilst they looked really pretty, I was still hesitant on the healthy option routes. Those who know me, know I’m still on that road, but have meandered occasionally down that route. Hence the recipe of the day! I use our Crunchy Granola Clusters to layer but you could any other neutral flavoured granola that won’t clash with the hints of cardamom. The rose and cardamom makes a spectacular combination and also very very eye candy!

  • Recipe Ingredients 

90g Greek yoghurt, plain
pinch of freshly pounded cardamom
2-3 fresh rose petals
Crunchy Granola Clusters
Fresh fruit of your choice
Berry coulis or jam (optional)
Drizzle of honey

  • Recipe Instructions

Mix the yoghurt with cardamom and rose petals
In a clear mini cup, layer with some of the yoghurt
Follow up with a layer of granola
Then follow up with layer of yoghurt
Then some berry coulis / jam / compote (optional)
Then granola, followed by fresh fruits and drizzle of honey

Oatmeal in a mithai flavour format? This is a real killer with the elderly who love sweets, but need a bit of fibre alongwith. I make the oatmeal the old-fashioned way in water with a pinch of salt, and for flavour i char-grill pineapple bits, add kesar, elaichi, badam and pista. If you like, add a dash of malai at the end and stir well! All the richness without the guilt!

Whenever I get my hands on a packet of fresh herbs I like to use them up in all ways possible before they get spoilt. Sage is one of my favourite – goes in eggs, pastas, potatoes, cocktails, into a syrup, on fruit with some salt and sugar – the possibilities are endless. But my honest favourite way is pairing sage with pumpkin – a match made in true heaven. I sauté up the pumpkin slices with garlic, leeks and then the sage is added in for its delightful warm, peppery delicious flavours. The egg batter goes in with some peas and cheese and always, always a pinch of nutmeg to make a delicious frittata. I have this for dinner multiple times a month – but if you have a brunch party – go ahead whip this one up!
