French Onion Dip

This is one of those recipes that have a permanent spot on my party table – so easy to make, and best of all – to be made in advanced. I often caramelize a larger batch of onions beforehand to add to omelet, grilled cheese toasts, and so on – then add into the Greek yogurt mix a day before the event for the flavours to really develop!

INSTRUCTIONS

1 In a pan warm the olive oil and butter and sauté the onions with salt on low heat
2 Once they become translucent add all other seasonings and sauté
3 Once they have cooked through well, add the splash of white wine vinegar and sauté to caramelize further
4 Switch off the heat and allow to cool down
5 In another bowl stir together Greek yogurt, ricotta cheese, olive oil and chives
6 Stir in the caramelized onions well
7 Set covered in the fridge
8 Serve cold

ingredients

Onions:
1 ½ cups sliced onions
1 tbsp olive oil
1 tbsp butter
1 tsp cayenne pepper
1 tsp salt
Pinch of brown sugar
1 tsp white pepper
1 tsp garlic powder
1 tsp onion powder
1 tbsp dried thyme
Splash of white wine vinegar

Other:
¾ cup Greek yogurt
¼ cup ricotta cheese
2 tsp extra virgin olive oil
Handful of chopped chives
