This is one of those recipes that have a permanent spot on my party table – so easy to make, and best of all – to be made in advanced. I often caramelize a larger batch of onions beforehand to add to omelet, grilled cheese toasts, and so on – then add into the Greek yogurt mix a day before the event for the flavours to really develop!
The Recipe
400 g approx
Ingredients
Onions:
1 ½ cups sliced onions
1 tbsp olive oil
1 tbsp butter
1 tsp cayenne pepper
1 tsp salt
Pinch of brown sugar
1 tsp white pepper
1 tsp garlic powder
1 tsp onion powder
1 tbsp dried thyme
Splash of white wine vinegar
Other:
¾ cup Greek yogurt
¼ cup ricotta cheese
2 tsp extra virgin olive oil
Handful of chopped chives
1 ½ cups sliced onions

1 tbsp butter
1 tsp cayenne pepper

Other:
¾ cup Greek yogurt
¼ cup ricotta cheese
2 tsp extra virgin olive oil

Instructions
In a pan warm the olive oil and butter and sauté the onions with salt on low heat
Once they become translucent add all other seasonings and sauté
Once they have cooked through well, add the splash of white wine vinegar and sauté to caramelize further
Switch off the heat and allow to cool down
In another bowl stir together Greek yogurt, ricotta cheese, olive oil and chives
Stir in the caramelized onions well
Set covered in the fridge
Serve cold
