Red Wine Vinaigrette

This is one of the best salad dressings that deserves a constant position in your fridge. But for this dressing you absolutely must use Dijon mustard – under no circumstance must you replace with whole grain or the plastic stuff that you squeeze out of a tube.

This is a dressing that is slightly on the sour side but perfect with fleshy avocado and medley of greens.

Simple, perfect and delicious!

The Recipe
Serves

Ingredients

  • Dressing:
  • 3 tbsp red wine vinegar
  • 3 tbsp extra virgin olive oil
  • 2 tbsp honey
  • 2 tsp minced garlic
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 1 tsp pepper
  • Salad:
  • 100g lettuce leaves
  • 1 avocado, cubed
  • 15-20 onion slices
  • flaked almonds

Instructions

  • Whisk all the dressing ingredients and store in an airtight container in the fridge
  • Toss the salad with the dressing and serve cold, and immediately

Mango season means mangoes are innocently weaving its way into all our meals. This is a great way to add a fresh salad to any meal with a simple delicious dressing that complements the sweetness of mangoes beautifully. The crunch of peanuts and sesame seeds is just brilliant juxta positioning. For this salad I am partial to Badami Mango for it’s sturdiness and tartness. But alphonso works just as well. As do all other mangoes – it is the king of fruits for a reason!
