Every wondered how much can we really grill? A barbeque dinner hasn’t always been my favourite. My years abroad told me that a barbeque meant plates of meats and I would be stuck with a simple, starchy baked potato.

But after I moved here, BBQ meant a whole new world filled with platters of hearty vegetables and paneer in various marinades, sauces, and seasonings.

This tandoori vegetable is inspired from the tiger safari trip at Bandhavgarh. Just a few basic simple seasonings make a world of a difference to a grilled veggie and the taste is amazing. Even more unique is that very few think of applying this to the ladyfinger – but trust me, they taste so yummy!

Surprise your guests with these ladyfingers and if your kids are fussy, pair them with some tandoori potatoes, paneer and other kid-friendly ones.

The Recipe
Serves Yields: 10 | Prep Time: 10 mins | Cook Time: 20 mins

Ingredients

  • 10 ladyfingers
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • ½ tsp red chilli powder
  • ¼ tsp turmeric
  • ½ tsp salt
  • 1 tsp vegetable oil

Instructions

  • Mix all the spices and salt together.
  • Brush a grilling pan with oil and place on high heat.
  • Roll the ladyfingers in the spice mix and place the ladyfingers on the hot pan.
  • Grill the ladyfingers until well cooked.
  • Serve hot.
  • Serve with tandoori roti or other Indian breads and a variety of grilled/tandoori vegetables and kebabs.

A gentle easy spice masala mix roasted and blended and then stuffed into the brinjals. cooked and then tossed in a yogurt-based curry - neither too spicy nor too tart - it's a great balance. have it with Makai Roti, Bajra Roti or rice!  This is a south Indian-inspired masala mix, perhaps a bit of Hyderabad is here too, along with Andhra. I’m not sure, but I mixed and matched a couple of youtube recipes and here we go. (this has been made once a week since!)

Sunday lunches are quite the ordeal at my house, particularly when the weather is good. We make it a point to eat out in the garden, listening to the birds chirping and talk even more, because we never tire of each other’s stories! My dad came to me one day and asked me to make a French style stew with mushrooms. A red wine bottle made its way to us and he felt that was the best use of it! So here is a recipe that is ridiculously easy to make, adapted to the Indian ingredients, made quickly. I served it with mashed potatoes, warm bread rolls and a garlic parsley butter. I mention using vegetable stock, but I have used plain water many times and works just great, but those times I do let it cook a bit longer. For those asking for a sub for the wine – sorry I don’t have any suggestions there!
