The Traveller’s Pasta + Bean Salad

This is the ultimate full meal to carry with you on board a flight or train. The ingredients are chosen accordingly to ensure that they travel well without spoiling too fast and hold shape. Pack the dressing in a small container separate to ensure no sogginess!

INSTRUCTIONS

1 First mix the dressing together and store in a small container
2 In the bigger tiffin box, stir together all the ingredients
3 When ready to eat, simply pour the dressing into the salad, shake it up and enjoy!

ingredients

½ cup boiled macaroni
¼ cup boiled rajma / kidney beans
¼ cup boiled corn
¼ cup boiled peas
1 tbsp chopped olives
1 tbsp cubed cheese
Handful of mixed seeds (pumpkin, flaxseed, chia, sunflower)

Dressing:
1 tbsp extra virgin olive oil
½ tbsp lemon juice
½ tbsp mayonnaise
½ tsp salt
½ tsp black pepper
½ green chili, finely chopped
1 tsp red chili flakes
2 tsp mixed dried herbs (oregano, basil, thyme, rosemary)

Tomato Tart

This is a very simple tomato tart that showcases tomatoes at it’s very best. It’s especially great to make it when they are in season – but alas my schedule and seasons some time do not align! This is a tart I make regularly for my baby niece who usually has an affinity for sweets, but loves tomatoes and pizza. I thought, for her birthday, let me make a savoury tart she likes, and nobody really gets into trouble! This is the easiest bake if you’ve get ready puff pastry and done the pre-instructions as per it’s packet.

Lemon Butter Sauce for Pasta

This is one of my favourite sauces that is so versatile - it goes in pasta, on top of grilled vegetables (w zucchini being my fav combo), with baked potato, rice, orzo, marination for fish - the list is endless. I make this butter sauce in the morning for the evening, and whilst some say you can use it upto 2-3 days, I've never had it last beyond that one meal, no matter how much I make of it!  This recipe to make is more of a sensory one, adjusting as per your mood for the day, and also if its to be cooking instantly, drizzled lightly on top, or marinated for a while - the adjustable ingredient being the wine and lemon juice. Make this a few times, and you'll get the hang of it. Each time I dress up the sauce based on what I have. This time I used a lot of capers, tomatoes and pistachios, and few pink peppercorns. But I have in the past added basil, parsley, coriander, sun-dried tomatoes, pine nuts etc!
