This is a classic British snack inspired recipe - a mix between Welsh rarebit and cheese on toast - which is an open faced toast with a medley of melted cheese and dash of Worcestershire sauce. i add an egg into the cheese mix to help with setting of it, to add a bit of protein and to get that quiche-y type of topping! to this mix i also add a touch of mustard (English mustard is preferred!) for that little kick.

Ingredients
2 slices of bread – toasted slightly
Pat of butter for the toast
1 egg
1 cup of assorted shredded cheeses
Salt and pepper
Herbs of choice
A spoonful of Worcestershire sauce
English mustard – as per your heart’s desire!
Hot sauce to serve

Instructions
Preheat the oven at 180C
Grease a small flat baking tin
Butter the toasted slice of bread
In a bowl whisk together the egg, cheese, salt, pepper, herbs, Worcestershire sauce, mustard well
Then place on top of the toast
Transfer the cheese toast onto the baking tin and bake for 15-17 minutes until nice golden on top and cooked through!
Serve with hot sauce!
