While traveling last month I flipped through Vogue to while away time, but a delightful picture caught my eye – a mango toast speckled with bright red chili and a spread of almond butter. I just had to do recreate it with no messing about to the original. The minute details evade my poor memory, and perhaps it’s a dish at a restaurant or by a famous chef – so thank you whoever you are, but this was absolutely delicious.

I used quinoa sourdough bread by Le Artisan Boulangerie as the base, and spread a generous amount of unsweetened almond butter, followed by slices of luscious mangoes, and a daring sprinkle of a lot of red chili powder and paprika. This combination sounded odd and weird but, I can assure you, its simply mind blowing!

  • Spread 1 tbsp almond butter on each slice of bread.
  • Arrange the mango slices on top.
  • Sprinkle the red chili powder and paprika on top.
  • Garnish with mint leaf.
