Blueberry Muffins

This recipe comes, once again, from leftover frozen blueberries that were hidden in the depths of the freezer from a previous project! These are simple and easy to make, with not much sweat involved. A very basic batter, that can be adapted to any flavour – add some cinnamon topping in the middle and you can make it a streusel muffin, or chocolate chips, or perhaps even chopped up pears or apples!

Recipe Ingredients

100g butter, room temperature
100 g castor sugar
20 g brown sugar
2 eggs
1 tsp vanilla
1 cup flour
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
1-2 tbsp milk
1 cup frozen or fresh blueberries

Topping:
¼ cup brown sugar
½ tsp cinnamon
pinch of nutmeg
2 tbsp granulated sugar

Recipe Instructions

Prepare a muffin tray with liners and preheat the oven at 180C
Stir the flour, baking powder, soda, salt and set aside
Cream the butter and sugars for 3 minutes
Add the eggs and vanilla extract and beat further
Then fold in the dry ingredients to combine and add milk if required to loosen the batter
Then the blueberries
Bake for 20 minutes 180C
Remove on a cooling rack
