There is something about sweet and tart jam paired with ginger that tickles the taste buds like no other. In this recipe, we combine these two into a buttery loaf cake that is perfect to pair with a cup of tea, coffee, for breakfast, kid’s lunchbox – you name it.
This makes for a medium loaf – the fresh ginger is swirled into the batter for even distribution, whereas the Prickly Pear Jam is layered in between for a surprise jammy bite! I drizzle a simple glaze on top, and garnish with crystallized ginger – however, this is an add-on; by all means, a simple dusting of icing sugar works just as well.
The Recipe

Ingredients
- 1 ½ cups flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¾ tsp salt
- 2 tsp freshly grated ginger
- 1 tsp fresh ginger juice
- 1 tsp vanilla extract
- 6 tbsp soft butter
- 6 tbsp castor sugar
- 6 tbsp yogurt
- ¼ cup milk
- ½ cup Kitchen Therapy Prickly Pear Jam
- Icing
- ¾ cup icing sugar
- 2-4 tbsp milk
- crystalized ginger pieces
Instructions
- Grease and flour a medium loaf tin
- Preheat the oven to 200C
- Whisk the dry ingredients in a small bowl and set aside
- Whisk the yogurt and milk together and set aside
- Cream the butter and sugar together for 3 minutes, or until light and airy
- Add the yogurt mix, vanilla, ginger and ginger juice and whisk again
- Add the dry mix and mix just to combine
- Pour half the batter into the loaf tin
- Layer Prickly Pear Jam across the batter
- Pour the remaining batter on top
- Tap the tin on a surface a few times
- Bake for 30-35 minutes
- Remove from oven and allow to cool completely before removing from tin
- Once cake has cool completely, drizzle icing on top and garnish with crystalized ginger
