Cheesy Mashed Potatoes

They say ‘carbs are a girl’s best friend’ and there is no argument in that. As I mentioned before there was an Italian eatery in our city that my girls and I would frequent to. One of our most indulgent orders would be this cheese mashed potatoes that came to our table bubbling with cheese, the perfect golden brown colour on top and creamy potatoes inside. I always had a large helping paired with a chili oil and English mustard. Here’s my copycat version

Psst - for the boiled potatoes I used some of the leftover potatoes of Roasted Potatoes

  • Recipe Serves

2 ramekins

  • Recipe Ingredients

3 boiled potatoes
2 tbsp butter
2-4 tbsp cream as per your liking
½ tsp salt
½ tsp black pepper
pinch of nutmeg
mozzarella cheese and processed cheese
optional add ins: minced garlic, fresh or dried herbs, chilies, grated vegetables such as carrots, zucchini

  • Recipe Instructions

Preheat the oven at 200C
Smash the boiled potatoes
Then add the butter, cream, salt, black pepper, nutmeg into the potatoes and mix well
Lightly grease two ramekins
Place the mashed potatoes in the ramekin leaving a little room on top
Place mozzarella and grated processed cheese on top and bake in the oven for 15 minutes approximately – until the cheese is golden and bubbling
Serve with some extra freshly cracked black pepper
